Jo's Rosemary Bread

Reviewed: May 24, 2010
Followed the recipe exactle; good bread dipped in olive oil. Next time I will increase the rosemary and italian seasoning a bit. Didn't quite taste like Macaroni Grill bread but close. Will definitely make again.

Lemon Chicken Piccata

Reviewed: May 13, 2010
Easy flavorful dish!! Perfect for a busy weeknight meal. The only thing I did different was in the way I prep the chicken. I cut the chicken breast horizontally and then pounded the chicken out until it was about 1/4in thick. Got this advice from America's Test Kitchen cook book. And I didn't have any parsley on hand so I left it out; still a great dish.

Macaroni Tuna Casserole

Reviewed: May 5, 2010
Quick and easy meal, but was lacking a bit in flavor. Next time I will add onion/fried onion, another can of tuna, and garlic. Kids gobbled it up so I will definitely try again.

Mama's Asian Chicken and Rice

Reviewed: Apr. 8, 2010
Thought this was pretty good. I did double the sauce but thought it was a bit too sweet. So I will decrease the amount of brown sugar next time. The chicken came out a bit chewy even though I only browned it for about 6 minutes. I don't think the chicken needs to brown that long if it is going to simmer in the sauce for 30 minutes. Added mushrooms to the sauce and served over jasmine rice. Might also try to add other veggies next time.

Fluffy Pancakes

Reviewed: Feb. 15, 2010
The only thing I would suggest is to add a little vanilla for extra flavor. My kids love these pancakes and request them often.

Royal Icing III

Reviewed: Feb. 13, 2010
Well I was going to give this 5 stars but hubby didn't like the taste. I used this for rolled out sugar cookies. I still gave this four stars because I liked the way it worked with the sugar cookies. My hubby suggested adding vanilla to add more flavor but that could turn a white icing a brown?!? And my kids loved the taste of the icing without alterations. So we will try the vanilla next time and see how it goes.

The Best Rolled Sugar Cookies

Reviewed: Feb. 13, 2010
This our new go to recipe for sugar cookie cutouts!! I had given up on finding a decent sugar cookie recipe but this one is just about perfect. I did cut the recipe in half(only made 30) but I did up the sugar and vanilla some. And watch your coooking time, mine only took about 5 minutes for crunchy on the outside and chewy on the inside type cookie. I also made Royal Icing (got the recipe from this site). The best heart shaped cookies I've seen for Valentine's Day!!

French Fried Potatoes

Reviewed: Feb. 12, 2010
Making these right now and they are very good. I seasoned with seasoned salt as soon as they came out of the fryer. I think the key to frying anything is the right temp of the oil, using fresh oil and not overcrowding the pan. And I did fry these a bit longer than 6 minutes. The first batch came out kind of soggy even though they were cooked on the inside.

Greens with Cannellini Beans and Pancetta

Reviewed: Feb. 1, 2010
I think the recipe needs to add liquid or chicken broth to the steaming process. It definitely adds flavor. I had never tried kale (used kale only)before and I do think it is a bit bitter. My husband also made a red wine reduction to go on top of the greens. That helped with the flavor. Will make again and pass on to others.

Quinoa and Black Beans

Reviewed: Jan. 30, 2010
Just made this for Saturday afternoon lunch. It is so good; especially with a little sour cream on top!! I think cilantro and stock can make anything taste good. I had tried quinoa before and didn't like it but I think the flavors in thise dish changed my mind. I took the suggestions of others and cut back on the black beans. Will make this again soon!!

Vanilla Wafer Cookies

Reviewed: Jan. 20, 2010
These cookies are so good and very addictive. For those who say they don't taste like store bought vanilla wafers I would say check the ingredient list of those store bought cookies. If you can get your hands on all those additives and put them in your homemade wafers then you would have the same flavor. Homemade cookies are not supposed to taste like cookies on a shelf. They are supposed to taste better and these vanilla wafers do.

Doubletree Hotel's Cookies

Reviewed: Aug. 9, 2009
These cookies are wonderful and very addictive. I made them for church potluck and was wishing I had kept some at home for myself. I did follow a Doubletree recipe that I found on another website but it was pretty similar to this one. I also used chocolate chunks instead of chocolate chips; thought the chunks went better with the walnuts. But I think what makes these cookies a winner is the cinnamon. Will definitely make this cookie again and again.

Simple White Cake

Reviewed: Aug. 5, 2009
I wanted a quick and easy recipe for cupcakes and this worked for me. I thought it was going to taste like white wedding cake but it taste more like a sugar cookie. My kids even call it sugar cookie cupcakes. Mine did come out fluffy and I made chocolate icing to add a bit more sweetness. Like other reviewers stated I added 1/4 cup more milk.

Soft Chocolate Cookies

Nice to have something other than chocolate chip or peanut butter cookies. And I always have the ingredients on hand. Made these for a school carnival bake sale and they didn't last long. Great cookie!!

Quick and Easy Brownies

Reviewed: May 27, 2009
This is definitely a five star brownie with a few adjustments. Like many of the other reviews I would suggest decreasing the flour to 1 cup if you want a chewy brownie. Also watch the bake time, I only baked mine for about 20 to 22 minutes. And don't over beat the mixture. I would beat by hand, adding the eggs one at a time, and would not use a hand/stand mixer. Made these last night and they came out chewy and fudge-like just how we like them.
