Coconut-Lime Chicken with Grilled Pineapple

This chicken recipe was easy and tasted delicious. I ended up adding some sliced avocado on top with the pineapple and this made it taste even better. I also used canned chunked pineapple since did not have fresh.

Smoked Sausage and Zucchini Saute

I went by the recipe but did substitute fresh tomatoes for a can of rotel. I personally thought it was to spicy for my medium spice taste. Not sure if I would make this again. I don't know if it would have tasted any better with regular tomatoes.

Chicken Noodle Casserole I

I made the lower fat version and it was delish! I used whole wheat egg noodles, reduced fat cream of mushroom and reduced fat sour cream. I did read the reviews and added salt and pepper to the chicken and I actually sauteed half of a chopped onion and threw in some garlic and spinach at the very end. I mixed it in with everything else and topped it off with about 1/2 of the ritz crackers and butter. This will feed my family x 2 days! Will be adding this to my recipes.

Creamy Summer Vegetable Salad

I made this recipe and did not add the radishes since I am not a fan. I added avacado as a sub. I also thought it needed a little something so added some dill. I think this recipe is a good base for a fresh summer salad and really enjoyed it.

Killer Shrimp Soup

FANTASTIC! I was so impressed with how good this shrimp dish turned out and how easy it was. My whole family, including 2 and 4 y.o. gave it 5 stars. I did get started a little late in the day so only simmered 1 1/2 hrs after adding wine. Just as great. Also sauteed the shrimp with a little hot sauce, garlic and italian spices to give it some flavor. Only need 1/2 c. butter. It turned out perfect. Not to spicy for the little ones. We served this with french bread for dipping and a side salad. I will be keeping this one for sure!

Cha Cha's White Chicken Chili

Great base recipe. I actually changed a few things which makes this a great recipe to use to make something your family will love. Both my kids ate it up and hubby liked it too! I added three different white beans(what I had in pantry), a can of stewed tomatoes, can of corn, can of reduced fat cream of chicken soup and three cans of chicken stock. No peppers added and I did reduce the cayenne pepper. Hubby added own hot sauce. Served with tortillas and mexican cheese. Yummy!

Slow Cooker Beef Stroganoff I

This was very good even with the large mistake I made! I actually added two packages of lipton golden onion soup to this recipes instead of the cans. It turned out great and had lots of flavor. I followed jillybeans tips and also added a can of cream of mushroom soup and another 1/4 water b/c of my mistake. It turned out wonderful and was easy. Gave it four stars due to the change in recipe.

Easy Cheddar Biscuits with Fresh Herbs

Made this at the last second. They weren't bad for quick biscuits. I added a teaspon of minced garlic to the wet ingrediants and I think this made them taste even better.

Awesome Egg Salad with a Kick

Made this following the directions but did omit the horseradish. I think it had enough kick without it. I am not a huge egg salad fan but I think this tasted great. I think the combo of mayo/sour cream/dijon gives this a better taste.

Golden Potato Soup

I made this using the lower fat options. It turned out great. Hubby and kids loved it. I did make a few changes. I used another reviewers suggestion of frozen cubed potatoes and this helped with prep time. Even threw in a bag of southwestern hashbrown potatoes and one regular cubed potatoes. Turned out great. I did double everything and added about 2 cups more water. I cooked it for 1 hour to help reduce it and added the cheese at the end. Used low fat sour cream, skim milk and 2% shredded cheese. I also threw in a can of corn after draining. Very easy and quick meal!

Italian Sausage, Peppers, and Onions

I followed the recipes but found the taste to be sort of bland. I did use mild sausage because of my little ones. Not sure if the hot sausage would have made a huge difference.

Apple Pie by Grandma Ople

Pretty simple apple pie recipe. I used pilsbury pie crust. This cake was great. To keep the liquid in the pie tin I lifted the pie and rotated it at the same time to keep the liquid even and from running over the sides. Definitely try and pile as much apple on top as you can b/c it will sink a little.

Extra Special Banana Pudding

Very good banana pudding recipe with the coconut. I actually lightened it by using fat free milk with pudding, light butter and fat free cool whip. Kids ate it up. Came together pretty easy just took a little time to cook the coconut crust.

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

I took this to a baby shower and all ladies LOVED it! I did make a few changes but over all followed the recipe exactly. After preparing the salad dressing I marinated the shrimp in it for several hours as one poster mentioned. I also subbed cucumbers with zucchini b/c not in season. I also put about one tbs. honey to vinegerette. After broiling the pepper there was some burnt areas which I peeled off easily before chopping. Great recipe!

Fast and Easy Pancakes

Like the idea of the blender. Was quick and easy. I ended up using 1/4c sugar and added cinnamon and 2 bananas for fun. Although they were dense the family did enjoy them.

Pecan Pie V

Great and easy recipe. Took other suggestions and lowered the temp for baking to 350 and 300 degrees. I also used a premade graham cracker crust (only thing I had on hand). Sprinkled some chocolate chips on the bottom of the crust before pouring the mix over. Was a big hit for Christmas Eve family get-together.

Baked Spaghetti

Wow this was yummy! I actually tried to cut down on the fat and substituted with several things. Used fat free cottage cheese, 2% italian cheese (only used 2 cups), reduced fat parmesean and egg beaters. I also used two jars of spagetti sauce and it really was needed. Make sure to spray foil with nonstick cooking spray. Also added fresh parsley and lots of garlic to the meat mix. Made a ton and bet it will taste even better tomorrow!

Andrea's Pasta Fagioli

Used two jars spaghetti sauce instead of tomato sauce. Diced up some carrots and sauteed with onions. Used only cannellini beans. Left out parmesan. Did not mix the spaghetti with the soup. Actually cooked frozen cheese tortellini and dropped several in a bowl once dished up with a sprinkle of parmesan. The kids loved it!
