About this Cook
I am a teacher of preschool children with disabilities. I taught all levels for two years in the Alaskan bush. I have 8 children and many grandkids. I love going to church, being with friends and family, and working with young children. I have a rustic cabin out in the country built by my kids. I raised my children the 'old way' and raised, made, preserved, grew, processed, etc., almost everything we ate for many years. I have been a writer and a musician, and have even worked in house building, as well as farming and cooking. I believe in raising your own food, breastfeeding your babies, loving your kids enough to make them behave, and daily reading of the Bible. I pray daily and trust the Lord for all the things in my life that I need.

General Tsao's Chicken
Just a word of caution: I do NOT recommend the use of MSG in anything. There have been terrible health issues from it. But the recipe was great otherwise. I reduced the starch and increased the liquid. Marinated the chicken in it over night then drained the marinade (sauce) off, baked it and added the sauce back in during last 15 minutes of baking. Trying to cut down on fried food. This turned out great. BUT NO MSG. My mom nearly died from it. And I know others who have strange and horrible reactions from it. Just a warning.

Beef Tamales
I have made tamales for years, and this is a good recipe. I just wanted to say that IF you love tamales but can't eat them due to the fattening nature of the ingredients, there is a very good substitute. You can use water (yes, water) instead of lard. And if you need less meat you can use the same spices in some blended blackeyed peas for the filling. Now I know this is not the SAME, but it IS quite good and would be a great way to once again have tamales even though your doctor has said 'NO.'

Awesome Grilled Cheese Sandwiches
I raised 8 farm fed kids, and believe me, grilled cheese was always a favorite. We made all kinds of sandwiches and open faced sandwiches on the cookie sheet in the oven. It's the best way to do it with a large family. We also loved open face with peanut butter, or with cheese, or with brown sugar and cinnamon and all these were on top of a thin spread of butter. Sometimes I put the oven on bake and sometimes on broil. I also made a concoction of crab and mayo, onions, boiled eggs and cheese for an open faced sandwich in the oven. Another quick hint for busy parents of large families, you can serve almost anything edible wrapped in a tortilla.
