Soft Giant Pretzels

Reviewed: Jan. 24, 2009
These are the best homemade pretzels. They are chewy and soft. I have made them many times and have always gotten rave reviews. They are gone within the hour. I brush them with melted butter and sprinkle the salt on before I bake them. It gives them a deep golden brown color and makes them extra tasty. *For those without a bread machine: combine the yeast, water and sugar in a bowl and let sit until it is foamy. Add your flour until it pulls away from the sides of the bowl. Knead it until smooth on a lightly floured surface. Place in a greased bowl and cover for 45-60 mins or until doubled. Then continue following the directions.* The water/soda bath is an important step because it helps the rising of the pretzels in the oven.

No Commercial Yeast Starter

Reviewed: Jan. 1, 2009
I started mine a couple days ago and fed it 2 times a day. It works very well and produces a delicious bread. The best part is, once you get it going, you will not have to start again unless it molds or gets thrown out.

Heavenly Hash

Reviewed: Aug. 2, 2008
My family has made this for as long as I can remember but we call it glorified rice. Instead of the whipping cream and sugar I add cool whip to it. Also, it helps if you make the rice the day before so it is completely cooled.

Popcorn Macaroons

Reviewed: Feb. 5, 2009
With a little more work, these can be a five star. I liked the texture and the slight crunch of the popcorn, but they were too salty. They needed less salt and more sugar. I might try these again.

Bow-Tie Pasta With Red Pepper Sauce

Reviewed: Jan. 24, 2009
This was really good. I added red pepper flakes to give it some spice. Also, I substituted the peas with brocoli. I will be making this again. It is a good change instead of using tomato pasta sauce.

Apple Harvest Pound Cake with Caramel Glaze

Reviewed: Nov. 29, 2011
I made this for a project in my baking class. The chef and others thought it was really good. I brought the left overs home and my dad gladly ate them up. It is a nice tender cake with the perfect amount of spice and apples. It goes really well with homemade ice cream.

Roasted Beets and Sauteed Beet Greens

Reviewed: Jun. 17, 2010
This is very good. I did not use any of the oil and used garlic and onion powder instead of fresh. I added dried thyme because I think it goes nicely with beets. The vinegar added a nice flavor to this dish. I will be making this again.

Banana Cream Pie with Caramel Drizzle

Reviewed: Jul. 10, 2008
This is a good and easy pie. The only thing I would like to be different is the amount of banana flavor in the pie.

Refried Beans Without the Refry

Reviewed: May 3, 2010
These are the best refried beans. They are easy to make and are not laden with fat.

Tropical Coleslaw

Reviewed: Feb. 1, 2009
I made a few adjustments based on what I had on hand. I used 2 small honeybell oranges instead of the canned oranges. Also, I cut fresh pineapple into small pieces. I didn't soak the banana in lemon juice because I put some in the slaw when I mixed the yogurt into it. It is good but will be better when I have it with dinner and it is softer.

Peanut Butter Pancakes

Reviewed: Jul. 5, 2008
I love peanut butter. These were awesome and worth the time to make. I used crunchy peanut butter and it gave them a butter taste then just smooth peanut butter. 5-Stars all the way. I am not a big butter fan but made the butter anyways. It was really good, too. The only change I made was I added a little bit of flour to thicken up the batter a little bit.

Strawberry Pie II

Reviewed: Jun. 23, 2008
This pie was really good and easy to make. I took the suggestion of adding less sugar depending on how sweet the berries were. It came out perfect. I will be making this again. Also, it is healthier then most other pies.

Roasted Grapes and Carrots

Reviewed: Jun. 1, 2008
I did not like this at all. The grapes were too soft and there was not that much flavor. It would probably be better as a cold salad.

Honey Nut Sticky Buns

Reviewed: Feb. 15, 2010
These were a big hit. They were eaten within two days of being made. I doubled the filling because it did not look like it would be enough. This is an easy recipe but takes time due to the dough needing to rise. These make a lot so I would cut the recipe in or freeze the uneaten left overs (if there are any).

French Silk Chocolate Pie I

Reviewed: Feb. 15, 2010
I have made this 3 times and each time it comes out better. My parents enjoy it very much. The key is to beat the eggs for the full 5 minutes each. I used a chocolate graham cracker crust and topped it with whipped cream.

I was disappointed with this recipe. I made it as written and it was nothing special. The search for the best cornbread shall continue.

Spinach and Sun-Dried Tomato Pasta

Reviewed: Jul. 16, 2009
This was really good. I used couscous instead of the penne and used the remaining stock as the liquid for the couscous. I will make this again.

Fortune Cookies I

Reviewed: Feb. 14, 2009
I am giving this 4 stars because they tasted good but they did not shape well for me. I think it was may pans that over cooked them and burnt the bottoms. They are good and I will try them again once I get different pans.
