Old Fashioned Pineapple Upside-Down Cake
Very good, as noted by others. I even substituted Splenda and Splenda Brown Sugar for the sugars used. Also added 1/4 cup light sour cream and 1/4 c pineapple juice (pineapple packed in its own juice). IMPORTANT: When you use Splenda, the cake apparently doesn't "lift" as much. And since I baked this in a 9X13, my cake was barely higher than the pineapple rings : ( - you might want to double or triple the cake recipe if using a 9X13. Still really delicious, though.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta
Really good! Skipped the bacon wrapping and just stuffed the chicken with the spinach mixture. Added a little olive oil to the baking dish, and squeezed a couple lemons over the top before baking - otherwise followed the recipe. Does take some time to prepared, so not great for weeknights, but well worth the time and effort

Spinach and Feta Turkey Burgers
Maybe my expectations were too high, given the previous reviews, but these weren't as outstanding as I expected. I found them to be pretty dry and a little tasteless, but the kids really loved them. Made as directed, except added chopped kalamata olives, and broiled rather than grilling (which could be why they were dry). Based on the rave reviews from the kids, and the ease of preparation, I will likely keep making these. Thanks VbCook!
