Oatmeal Cinnamon Cookies

They tast very good. Since I like a crispy cookie I prefer to flatten them with a glass bottom dipped in cinnamon sugar, rather than just drop them.

Apfelkuchen (Apple Cake)

This is a great recipe. So simple and quick to make. I used fresh apricots and no crumbs. Instead I whipped one egg with 1/2 cup sugar and poured that over the apricots. This is a keeper!

Crepes

Wonderful, I am glad I finally tried to make these.I made a filling from leftover pork roast with gravy. Cut the pork up into small pieces add leftover gravy and a good shot of Madera wine or Sherry. Heat it all up, thicken with a little corn starch desolved in water. Add some sour cream and you have a very tasty filling. I also added some frozen peas to it for the veggie part. It was good enough for company.

Chicken Lasagna Alfredo

Rather tasteless. I had already added garlic and Italian spices to the ricotta mix, but it did not do the trick. Not cooked chicken but roasted chicken from a store like Costco's needs to be used. The chicken needs to be very flavorful. This would bring the rating to a 4 star. Also be aware that it makes a huge lasagna.

Orange Juice Cake

Problem solved. If cake is stuck due to the icing, add hot water to a bowl and dip the cake pan in for a moment. This will melt the icing enough to turn the cake out. This cake is wonderful. Instead of the 1 cup water I added 1 cup orange juice to the cake mix. It was too stiff, so I added 1/3 cup of extra water. My cake needed 10 extra minutes baking time. I let it cool in the pan, than poked it with a fork and poured the warm glaze over it. I did reduce the glaze by 1/3 and it was plenty. It turned out to be a lovely orange cake

Apple Danish

Very nice. I used regular yeast and desolved it in the warm water with a little sugar. A little grated lemon rind ads a nice flavor to the dough. If the apples are very sweet I would use less sugar for the filling. Mine turned out a bit too sweet. Also leave the apples a little on the crispy side. Next time I would add some chopped almonds. The glaze is fantastic and an absolute must. I hope I have some left over for tomorrow morning because my husband is sampling again and again.

Irish Cream Bundt Cake

Can't stop eating it! Very tasty and so light. I used a Dr. Oetkers (German) Vanilla Pudding, which has no sugar added, instead of the intant pudding. I buy it at World Market or a Deli. Cake is plenty sweet. The frosting is a must.

Chunky Tomato Potato Soup

Tasty soup. My husband added 1/2 tsp thyme and 2 cans of clams. A bottle of clam juice would be perfect too. It turned into a wonderful Manhatten Clam Chowder. With some french bread we had a very tasty dinner

Fettuccine with Sweet Pepper-Cayenne Sauce

Quick and tasty. I halved the recipe for the 2 of us and added 8 prawns. No problem with the sauce, the parmesan thickened it nicely. Used regular sour cream because that is what I had on hand. Also increased the cayenne pepper.

Moroccan Tagine

This really is a comfort food. I also added 1/4 tsp cinnamon, tumarec, and cumin. Also added a few raisins. Make sure the coriander is fresh. I used whole seeds, toasted and ground them.

This is the best Chicken Piccata I have ever had and that includes restaurants. Don't change anything. Yes it needs all the butter. Watch carefully when reducing the sauce.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

This salad is superb. The dressing is mild and so fresh tasting. I served it with a chicken casserole and it did compliment the ckicken. My husband loves it.

Pumpkin Ginger Cupcakes

Super delicious and so light with a little crispy crust. I tried half the recipe and need to make more tomorrow. It made 12 regular size muffins and 12 little mini ones. I baked those for just 10 minutes. Kids love the little bite size cupcakes.
