Delish Coconut Muffins

My kids and husband have been declaring these "the best muffins ever." I do admit we are a healthy household, i usually make whole wheat no sugar added kinds of things, and we don't like super sweet food. Given that background, we love these, they are soft inside, crunchy outside, and a good snack size when mini. I think they're just sweet enough but this is what I did: I used brown rice flower instead of white and my coconut was sweetened, because that's what I had on hand.

Oat Applesauce Muffins

I made a giant batch of these for my kids and parents and everyone loved them. We added a big bag of frozen blueberries, didn't change the recipe besides that. My kids loved the mini muffin version and would chow down several at a time. I love that there is no guilt and it tastes good! A great anytime snack.

Baked Garlic Green Beans

My husband and I were pleasantly surpised at the tastyness of this quick, easy dish. I used fresh onion, apple cider vinegar and kraft canned parmesan so I didn't know how it would turn out but it was great. I'm definitely going to make this again.

Easy Pesto

This sauce is fast, easy, and delicious! I love how quick it is to prepare and low-hassle. My husband and I ate 2-3 servings, it's so good! The only thing is that we add 2-3 cloves more garlic (personal preference), a squeeze of 1-2 limes, and threw in some grated parmesan (from a can) and it's great. You don't have to put those things in and it's still pretty good, but with it, it's a favorite in our home.

Corrigan's Minestrone

My husband and 2 year old and I enjoyed this immensely! Yum! My husband is not usually a soup fan but this was perfect as it was chunky and thick -- especially since he had a sore throat, it hit the spot.

Fabulous Zucchini Grinders

Easy and fast to make - great lunch! Husband loved it too. I used what I had on hand, just regular white bread pre-toasted in the oven, I used a kind of squash/zucchini and fried with garlic and onions and when I ran out of marinara, put in a little tomato paste and italian seasonings and it was fine-- added black olives before the oven. Will definitely make again!
