I thought this was a good base. I boiled the chicken first and added chili powder, garlic powder, onion powder and cumin to the water along with one large chicken bouillon cube. After the chicken was cooked I set aside the chicken to let it cool and saved the broth from the cooked chicken. I shredded the chicken and sauteed it with the onions in about 2 tbs of olive oil. I added the chicken, onion mixture to the broth and then chopped 1 zucchini and 1 yellow squash and added them along with the corn to the soup. Then I added the salsa and lemon juice along with a bit more chicken broth to give it the soupy consistency I wanted. It was so good with freshly fried corn tortillas and fresh avocado as garnish. Plus great way to sneak fresh veggies into my kids without complaints.
