Penne with Chicken and Pesto

So easy and so yummy. I used already baked chicken breasts from the grocery so I just had to heat the chicken in the oil/butter/garlic before adding the sauce. I did add a bit more pesto and a bit more parmesan cheese because we like extra. The whole recipe only took 12 mins from pan to table!!! Great when you work long hours but still want a home cooked meal. This one is a keeper.

Chicken Scarpariello

This was very flavorful. I accidentally used too much flour which made the sauce sticky in the end, but it was still yummy. I added some lemon as others recommended, which was a great addition. Next time I will cut the rosemary in half and use less flour. This makes way too much for 2 people, at least at our house!

Mexican Casserole

The flavors of this are great. I did add the taco seasoning to the chicken first as others recommended. I added torn pieces of corn tortilla to the bottom of the pan and then again on top of the chicken mixture before I topped it with cheese and chips. This made a wonderful crunchy crust. I also choose a smaller pan as others mentioned. I will make this again especially since it is so easy and so good.

Sugar Cookies

For a Christmas flare, I doubled the recipe and added 6 crushed candy canes. They turned out fabulous. I wasn't sure how much to flatten the rolled balls at first but learned that it doesn't need to be a lot. Yummy, not overly sweet, recipe. I will definitely make again and again.

Stuffed Flank Steak

I will defintely make this again. My family devoured it. I didn't have mushroom gravy, so I used a packet of brown gravy and the sauce was fabulous. I found the stuffing to be a bit too moist so I will use less water next time. I also like a bit more seasoning, so I will season the meat before stuffing. All in all, this recipe is a keeper.

Too Much Chocolate Cake

I made this for a coworker's birthday and it was a big hit. Not only was it simple, but it came out perfectly. I will definitely make it again. Next time, I think I will try another flavor!

Mom's Favorite Baked Mac and Cheese

I had a craving for Mac and Cheese, and came across this recipe. Everyone loves it and now this has become a new family favorite. I made what should have been 12 servings for my son and 3 of his fraternity brothers and they ate it all!
