Fast and Easy Spinach with Shallots
It was good. Simple, easy and the family liked it. Nothing to write home about, but definately a good quick recipe if you need one more dish and have spinach in the fridge.

Bourbon Pecan Chicken
Great recipe! The butter and pecan in the breading was the perfect consistency to stick to the chicken for frying. I also made a vegetarian version for my roommate using tofu. The only change that needs to be made is that you must use a beaten egg to coat the tofu before dipping in the pecan/bread-crumb mixture because doesn't have the same sticky consistency of chicken. Putting both the breaded chicken and the tofu into the fridge for a half an hour before frying worked well, as suggested by another user. The sauce for this recipe is what really put it over the top. It's an incredibly rich, powerful flavor, and I couldn't eat it every day, but it's PERFECT for a special occasion or to impress a special someone. ^.~

Best Chocolate Chip Cookies
Perfect for those in search of a wonderful, chewy, fudge-y cookie recipe! As many other users have mentioned, you need to be careful not to overbake them. For me, 8 minutes was perfect for an average size cookie, 9 for a slightly larger cookie. Next time I'm adding coconut and macadamia! ^.^
