Tortilla Soup II
Very good and easy recipe. I was out of diced tomatoes so I used a little tomato paste and prepared salsa in the broth. Added a can of corn and avocado, sour cream and shredded cheese for garnish. I like to make my own strips by cutting up corn tortillas and frying about 2 minutes in the deep fryer.

African Chicken Stew
I really liked this recipe. I double or triple the spices plus add in some curry. I added 2 carrots, 2 celery ribs, a can of diced tomatoes. I also used sweet potatoe and chicken broth instead. I'm still afraid to add the suggested amount of peanut butter. I first did it with a heaping tablespoon then with two. Will try with full amount next time.

Ramen Noodle Frittata
I made this by changing the cooking method a little. I put a cast iron skillet on medium low and melted some butter and sautéing a little onion and garlic. Then tossed in the drained an cooked noodles. I spread the noodles out evenly then pours the egg mixture over it and mixed in half the cheese. I let it get to almost set by covering and cooking about 5 minutes on medium low. Then sprinkled with remaining cheese and put in the oven on broil for almost 2 minutes just to melt and crisp the cheese. Next time I will add veggies and maybe meats and my own seasonings. Still a good twist on things you normally have on hand.
