Sweet Potato Pie II
This recipe is wonderful! My husband doesn't like pumpkin pie, so i thought i'd try this instead and he LOVED it! I followed some of the suggestions of others and didn't separate the eggs and i didn't add the white sugar. I had to cook the pie for an extra 16 minutes (my oven cooks a little cool). I baked the sweetpotatoes and mashed them with the butter (which would have made a lovely side dish all on its own) then added the rest of the ingredients. This is SOOOO good!

Mandarin Orange Cake I
My family loved this cake! I couldn't find an 11oz can of mandarin oranges so i used a 15oz can and lowered the oil to 3/4 Cup. It turned out wonderfully. Only gave this recipe 4 stars because of the frosting. It was like putting a fruit salad on top. WAY too runny, and i followed the directions for the frosting exactly. Next time i'll try draining the pineapple and reserve the juice. Then add it in a little at a time if needed. Wonderful cake! I'll make this again!
