Spinach Lentil Soup

Like other reviewers, I used 6 cups of low sodium chicken broth and 2 cups water. I couldn't find turkey kielbasa in my grocery store, so I used an all-natural roasted garlic chicken sausage. It was SO GOOD! I ate the entire recipe in two days, alone. The only change I will make next time is to double the amount of red pepper flakes. I found the soup quite mild.

As soon as my boyfriend took a bite, he told me we had to make this again. I baked the eggplant and added a layer of thinly sliced potatoes on the bottom of the casserole. I used thyme and oregano as my "fine herbs." I also added two eggs to the bechamel; the yolks I added directly after it had cooled a bit, and I beat the whites lightly and folded them in. I forgot the parmesan cheese until the very end, so it just got sprinkled on top. Still yummy!

These are super rich, but they're perfect for ice cream sandwiches. I halved the recipe because I knew my boyfriend and I wouldn't be able to stop eating them, and I was right.

Fried Rice Restaurant Style

Maybe it's because I used brown rice, but this recipe was really bland to my boyfriend and I, and we had to improvise a lot to get it to taste okay. We added a lot of duck sauce and black bean sauce, and I don't know, it was just disappointing. It's probably my fault for using brown rice (which I don't really like; it was the boyfriend's choice).

Sweet, Sticky and Spicy Chicken

I like that I had everything for this recipe already in my cupboard. Like other reviewers, I dredged my chicken, and that really helped to thicken up the sauce. Next time, I'll make it a little more sweet and a little less spicy, though.

Mushroom Pork Chops

This recipe is great. My boyfriend and I eat a variation of this almost every week. We like to add a lot more mushrooms than this recipe calls for. We also like to substitute the pork for chicken or lamb/veal pelmeni (Russian ravioli).

Feta Cheese Turkey Burgers

One of the best turkey burgers I've ever eaten. I used half a cup of sun-dried tomatoes, as someone else suggested; I also used a roasted pepper and basil feta and Emeril's Italian seasoning (and reduced it to 1.5 teaspoons). Served on an onion bun with cucumber and red onion slices and homemade tzatziki, with garlicky sweet potato fries, this made an excellent dinner.

Blackberry Cobbler

This recipe is awesome as is, and even better modified; I substituted 3/4 cup raw sugar, whole wheat flour, and a mixture of blackberries and strawberries for my filling. I skipped the sprinkled sugar on top but served the cobbler with vanilla ice cream. Perfect!
