Juicy Peach Crisp

Very good! I have made this twice. This first almost as originally written (used 3/4 cup sugar) and it was so juicy that it was pretty much slop the next day. This time I mixed 1/8 cup sugar with the cinnamon and 2tbs cornstarch and tossed that with the peaches before adding the topping and it worked almost too well. My crisp is excellent but maybe too dry, so I think 1tbs cornstach would be a happy medium.

Meatball Nirvana

I've re-read this recipe about 10 times trying to figure out what went wrong because these are just plain boring and unoriginal. I omitted the red pepper flakes and hot sauce, and used a dash of cayenne instead, but there is no way a little extra spice can fix this. Probably not worth the effort to tweak...think I'll just try a different recipe next time.

The Best Steak Marinade

You know that hot sauce commercial that says "I put that s*** on everything!"? Well, that now rings true of this marinade in our household. I first made it for some sizzle steaks while on vacation with limited meat choices, I didn't have mustard on hand, but you would have thought I'd bought high end filet it was so amazing. I had a lot left over, so I cooked it down and used it on grilled veggies the next day. I made it for pork yesterday (with mustard this time) and it was just as good!

Broiled Tilapia Parmesan

This was awful. I had to toss the first batch because the parmesan was much too overpowering. If you majorly alter the recipe it is pretty good, but I won't be using this again.

Spanish Rice Bake

This was great! After reading a few comments I did the following - used a dutch oven rather than multiple pans, browned the meat with a clove of garlic, used about a cup of green pepper and a full teaspoon of cumin. I used about 4 tsps of spicy thai chile sauce because that is what I had on hand. I covered the pot and simmered for 30 minutes and the rice was perfect. Didn't bother to bake at all, just topped with cheese and recovered until melted.

Dirty Diapers

Not impressed. I made the burger meat using my usual recipe (listed recipe plus all seasoning) which normally gets rave reviews, but this had rather poor flavor. I added the shredded cheddar cheese as previous reviews mentioned and the meat mixture tasted great. I used regular pillsbury crescent dough and the end result just didn't meld well. The dough was too buttery/sweet for the meat and dill pickle. I'll stick with my cheeseburger spring rolls.

Original Irish Cream

If I had used the recommended amount of whiskey, I doubt this would even have been drinkable. I used 3/4 cup of whiskey and still need to add an extra amount of the other ingredients (half the original amount). The result was good, but more like a mudslide than baileys.

Spinach, Artichoke and Crab Wontons

Great recipe! I followed some of the other suggested changes and added cream cheese and more than doubled the crab meat. I also added a little extra spinach, using 3/4 a package instead of just half. The mixture would also be fantastic as a warm dip or even served cold.

Savory Crab Stuffed Mushrooms

Excellent. I use 1.5 cups shredded (hand picked) and substituted panko bread crumbs. I also left out the lemon juice. Will definately make again!

Mongolian Beef II

Very good. I did make a few changes...I added an extra tbs of brown sugar to the beef marinade, added some fresh ginger and I left out the pepper entirely. I also used green peppers and green beans in addition to the onions and cooked them in oil and an extra half batch of the beefmarinade. I added some grated ginger and garlic to the vegetables as well. I would recommend using less cornstarch, as the beef marinade thickened way too much...I added extra soy sauce and some water to thin it out.

Fettucine with Heavenly Salmon Sauce

Moroccan Salmon Cakes with Garlic Mayonnaise

Very good! I used fresh salmon which I baked ahead of time. I left out the spinach and used one egg rather than the 2 egg yokes. I also used only 1/2 teaspoon of pepper. This is one of the few recipes that my husband has raved about.

Salmon Chowder

Good, but needs adjustments. I used fresh salmon and fresh garlic. I slow cooked everything in a crockpot. I used low sodium chicken broth and it still didn't need any salt. Too much pepper if you omit anything. I used 3 medium potatoes and I added a package of low fat cream cheese and that made it perfect!
