Deep Fried Cheese Curds
After many variations we think we cracked the State Fair code..(MN that is...) Add garlic powder and a touch more salt. I used half mix of beer and mil. I found freezing the cheese curds overnight and having the oil between 400and 410 work best. I also foundyou had to continue move them around in the oil. I could only do 2-3 at a time other wise they weren't evenly done. Cook just under a minute (golden brown) Hope this helps!!!!

Butter Brickle Frozen Delight
Everyone liked this a lot. With reviews saying this was too sweet, I made some minor changes. I doubled the crust (using only 1/3 cup sugar instead of 1/2), used a springform pan, omitted the nuts (hubby is allergic). I used 1 1/2 cups heavy whipping cream + tsp. vanilla whipped to a hard peak (whatever you call it) thus eliminating the need for cool whip (which is really sweet, sugar already added), folded it into already mixed 12 oz cream cheese + sweetened condensed milk. For the oatmeal portion I used 1/4 cup b. sugar not packed. I used less than a cup of smuckers butterscotch caramel topping (it's not two flavors, but combined in the jar) which is really sweet. I used a springform with 2 layers. I ended up using only 1/3 the oatmeal mixture, could have used 2/3. Think of an ice cream sundae and what toppings you'd like on it. If you like candy toppings like snickers or butterfingers smashed up, use those instead of the "brickle". If you prefer chocolate fudge topping, use that. The cream cheese/condensed milk/whipped cream is what the "ice cream" will taste like (it tastes better frozen with the topping on, than by itself unfrozen). Be careful, if you use a sauce/caramel/fudge that turns rock hard when frozen, you may be disappointed! If you don't like the taste of your topping, you will also be disappointed.

Strawberry Whipped Sensation
I'd give this 4.5 stars. I mashed the strawberries with my (clean!) hands until they were very squishy. I used 1/4 cup of key lime juice (all I had). I tasted it in the bowl, it was sweet, tasted like strawberries with some key lime juice (probably could have used 1/2 cup of the key lime if I had it). I figured that since we weren't baking it, the flavor would not change much, only absorb slightly more. I used 2 C. real whipped cream slightly sweetened with sugar/vanilla. This made it pretty sweet. I think next time I'd skip the sugar and just add vanilla. I used 12 oreos + 1 1/2 tbs butter. When you taste it out of the freezer, it tastes like ice crystal ice cream. Definitely let it thaw. I wish I would have used 20 oreos for the crust, would have been better. I'd also leave out the butter or reduce to 1/2 tbs. I could feel the grease on my tongue after I had a bite. Oreos have the inside portion which is creamy enough, so if they're mixed well I don't think there would be a need for butter. Next time I will use double stuffed.
