Breakfast Pizza I

I made this using grands flakey biscuits (did not have crescent rolls) that I separated and stretched to the approximate thickness of the crescent roll and placed in a very lightly greased 9 x 13 pan. I read several of the reviews all saying to precook the crust 4 - 6 minutes; so I did that. Made the rest of the recipe as directed and had to cook 50 minutes for the eggs to be done. The crust got crusty and took on that overdone taste. I will stick to my other breakfast bake; which is very similar to this less the crust and a couple more eggs.

Chocolate Chip Pumpkin Bread

I am a huge chocolate fan and thought this would be really good. However, I think it would have been better w/o the chocolate chips. I feel that they deminshed the pumpkin the pumpkin flavor.

Scalloped Potato-Onion Bake

Good comfort potato. I did add a couple things - a decent scoop of sour cream (b/c I used more potatoes and did not want to dry out), dash of rosemary and thyme; topped off with a little shredded cheddar cheese on top. When I was eating them, I realized I forgot the onion :( The family liked them alot.

Very tasty sweet. Makes a nice half batch too. The next time I make them I'm going to try milk chocolate chips vs semi sweet. Not a fan of the bitter chip.

French Dip Sandwiches

Very tasty! I used a top sirlion roast. The only substitions was a can of beef broth instead of the boulion and I did not have rosemary so I used crushed basil. I read comments of people thinking it was to salty; and with the substition of the breef broth it wasn't. (I'm not much of a salt person - so this was a concern). I also covered the entire roast with water after adding the other ingredients. To avoid it being to salting, I believe the trick is to modify the number of servings in the recipes until it best fits your roast size - then it will be more in proportion. We ate it for dinner last night along with some potatoes by just pulling off what we wanted along. I did reserve some of the liquid. Then today, we had it pulled apart on hoagie buns with provolone cheese and warmed a tad in teh microwave to melt the cheese and dipped it in the broth... YUM!

Slow Cooker Chicken Taco Soup

What an easy soup to make. After reading several ratings I decided to only use a half can of beer and half can of chicken broth. I think this gave it the right blend and it did not have a beer taste. I also used 3 large cans of chicken as that is what I had on hand. It could have used more because it shreds as it cooks. Will make again.

Make-Ahead Mashed Potatoes

Very tasty. If you are going to heat them for next day's use in a crock pot. Take the potatotes out of the frig and let them warm up a bit. You can also start the warming process by heating them in the microwave and then move them to the crockpot and top with butter.

Beer Beef Stew II

This stew was very good, however, rather sweet (reason for 4 stars). The next time I make it I will reduce the amount of brown sugar. I did add more veggies than it called for and tossed in some fresh mushrooms the last half hour of cooking.

Too Much Chocolate Cake

I made this for my in-laws 60th anniversary and every one loved it. I did the chocolate version and used Andes'Mint chips with a "few" chocolate chips and sprinkled a few on top of the chocolate glaze - no one said it was too minty. There was some left and I was amazed at how long it stayed so moist. Will make again - I bet it would be good with crushed up candy cane for the holidays. YUM!
