Spinach and Feta Turkey Burgers

I couldn't believe how fast and unique this was... everyone loved it!!! I added some salt, pepper, and oregano. It was great. I can't wait to make it again. Served with tzatziki sauce and baked wedges.

Flank Steak Pinwheels

THIS IS AMAZING!!! My boyfriend said it was the most delicious meal he's ever had. There's so much flavor in every bite, and the steak is so juicy and delicious. It tastes like a fancy, restaurant quality meal but it is surprisingly easy to make. Try it. Rolling it can be tricky, so be sure to pound out the steak really thin and try not to overstuff it. Also, kitchen twine and a meat thermometer are a must... I baked it at 425F for about 50 minutes and it came out perfectly medium well!

Spinach Tomato Tortellini

Can't stop eating!! I mixed a 9 oz package of cheese tortellini and a 9 oz package of spinach tortellini for more color. I also doubled the amount of spinach and used only 1/2 cup of cream. I might try to decrease that even further next time to make it a tad bit healthier! Other than the calorie count, it is fast to make and tastes awesome!!!

To Die For Blueberry Muffins

The title says it all! Best muffins ever!! I added a dash of cinnamon to the batter. Also if you're doubling the recipe you do NOT need to double the topping! I had so much I still had to toss some of it.

Country Apple Dumplings

I've made these twice now as written and it is THE most delicious, satisfying dessert ever!! Last time I halved the recipe and used diet mountain dew. I think I could easily cut back on the amount of butter by a few tablespoons though. These are such a crowd pleaser and much faster than making an apple pie!

Balsamic-Glazed Salmon Fillets

My husband LOVED this. I omitted the white wine because I didn't have any and it was fine. I might have cooked it too long on the stove because it was VERY thick when I went to pour it on the salmon. It still tasted great though. Served with a side of roasted asparagus cooked at the same temp with the salmon! Perfect.

Chocolate Chip Banana Muffins

WOW These are so fantastic!!!! I used apple sauce instead of oil and white whole wheat flour. These muffins have the most amazing texture..they are light and soft but filling at the same time. Best Banana muffins I've ever made!

Crustless Spinach Quiche

My roommates and I absolutely devoured this. The only difference was that I used fresh baby spinach. I didn't miss the crust at all and it is a great base recipe that you can add other ingredients to!

Wilted Spinach

I sauteed a 10 oz bag of spinach and added dried cranberries, and a little bit of crumbled blue cheese. Wow, it was so good!! Tasted like an expensive restaurant dish yet was so easy to make. I'll have to keep this one in mind for when we have company!

All-Day Apple Butter

This is AMAZING. I used 15 apples (mostly rome beauty) and about 2 3/4 cup sugar. I added about 1/4 tsp nutmeg, used less cloves, and 2 heaping tsp of cinnamon. I let it go over night for about 12 hours, and then added more spices this morning when I took the lid off to let the water evaporate. I can't imagine using the full 4 cups of sugar. Otherwise this recipe is soo delicious!

Delicious!! Upped the sugar to 1/2 cup but left everything else the same. The only problem was the baking time...after 11 minutes at 400F they were already browning!

Braised Balsamic Chicken

Fiance rated this a solid 8, maybe even a 9. Simple, quick, and so tasty. The chicken stayed very moist. I followed this recipe exactly except I used 2 cloves of real garlic instead of garlic salt. The spices are what made this dish awesome. Next time might try to cube the chicken and then serve the whole thing over rice for an asian flare. Yum!

Honey Mustard Dressing II

DELICIOUS!!!! I used nonfat greek plain yogurt and did have to add more honey because it was too tart. Turned out great though...my husband couldn't tell it wasn't store bought until I told him and then he was SUPER impressed. I will definitely use this as my go-to. I made this to accompany the Alice Springs Chicken recipe from this website.

White Chili with Ground Turkey

Followed this recipe exactly and I was very pleased with the results! I mashed up a can of beans with a fork and I think it helped thicken the soup. Oh but I did omit the cheese for less calories and I didn't feel like it needed it! With this recipe I had dinner on the table in 30 minutes. This is my new go-to and I will be making it again and again!

Herbed Green Beans

Wonderful!! The blend of spices was perfect and different from the way I usually make my green beans. I accidentally thought it said 4 T butter...but thankfully I only put in 2. That was still too much! But anyway I would definitely make this again. Out of convenience I used 2 cans of green beans instead of fresh, and heated them up on the stove, and it turned out great.
