Spicy Chipotle Turkey Burgers

Only changes were I used red onion and 1 tsp adobo sauce. Next time I will bump that up to at least 2 or 3 tsp sauce because it was lacking in flavor and spice. Overall though they were tasty and easy. I will likely make these again!

Zucchini Herb Casserole

WOW!! We loved this. It's different from anything I've made before and it was relatively simple. I used a bag of Success brown rice and 3 zucchini, a bunch of green onions, and 1 tomato peeled, seeded, and chopped. I actually meant to put in 2 tomatoes but forgot. The spices are perfect and the flavor is awesome!!

Grilled Lemon Chicken

For some reason this was not flavorful enough for us. I used the George Foreman which kept it juicy, but my husband and I both thought it was lacking. Maybe the spices needed to be doubled? Not sure. I won't be making it again.

Herbed Green Beans

Wonderful!! The blend of spices was perfect and different from the way I usually make my green beans. I accidentally thought it said 4 T butter...but thankfully I only put in 2. That was still too much! But anyway I would definitely make this again. Out of convenience I used 2 cans of green beans instead of fresh, and heated them up on the stove, and it turned out great.

Wilted Spinach

I sauteed a 10 oz bag of spinach and added dried cranberries, and a little bit of crumbled blue cheese. Wow, it was so good!! Tasted like an expensive restaurant dish yet was so easy to make. I'll have to keep this one in mind for when we have company!

Chicken Caprese

My mom made this and it turned out well. We didn't have the seasoning blend so we put the tomato on the chicken, then McCormick montreal chicken seasoning, the olive oil/vinegar mixture and then baked it and added the mozzarella at the very end. Pretty good, easy, and simple!

Chicken with Garlic, Basil, and Parsley

SO SIMPLE yet tasty and easy! It was fast, too... I only baked my chicken for 20 minutes covered and added mozzarella cheese the last 15 minutes it baked uncovered. I used fresh parsley because I had it, and actually omitted the tomatoes all together to suit our preferences. The red pepper gave it the perfect amount of kick!

Chicken Breasts with Balsamic Vinegar and Garlic

Great flavor! I love the mushrooms but my fiance doesn't, and it's fine without it. I followed the recipe exactly except I didn't let the chicken simmer with the sauce because I didn't want it to get overcooked. I added it back in at the end and it was perfect. Do use thinly sliced chicken breasts, and don't skimp out on the garlic/spices. Quick and easy. Yum!

Italian Sausage Soup II

Flavorful and not terribly time consuming, however I didn't measure out the pasta and I guess I put more than 1 cup because by the end of the night it ended up absorbing nearly ALL the cooking liquid!!! I couldn't believe it. Anyway I would probably still make it again but with less pasta. I also omitted the celery and sage to suit my preferences.

Spinach and Orzo Salad

We liked this a lot! I omitted the onion and pine nuts and used frozen spinach that had thawed. I think I will make this again. It was so easy and unique. Served it with roasted chicken for a healthy, elegant meal!

Braised Balsamic Chicken

Fiance rated this a solid 8, maybe even a 9. Simple, quick, and so tasty. The chicken stayed very moist. I followed this recipe exactly except I used 2 cloves of real garlic instead of garlic salt. The spices are what made this dish awesome. Next time might try to cube the chicken and then serve the whole thing over rice for an asian flare. Yum!

Fluffy Peanut Butter Frosting

Pretty good but I forgot to mix it for three minutes after combining it all, so it didn't turn out looking very fluffy. Instead, it kindof looked like I took a bunch of peanut butter and slathered it on a cake. Still tasted great though! Next time I'll be more careful (and there will be a next time!)

Spinach Chicken Parmesan

I took the advice of others and doubled the sauce, which was a great idea. I wilted fresh spinach and omitted the pimento peppers because I didn't have any, but other than that I followed the recipe. The chicken came it SO moist and delicious, plus it looked great. The only bad thing was it required several steps to make it and it did take a little while to get it all done. Other than that, it was great!!

Tilapia Soft Tacos with Chipotle Cream

Interesting recipe! My boyfriend and I both thought it was pretty good. I'm not sure if I'll make it again, but I followed it to a T and it turned out fine. The chipotle sauce gave a it flavor and quite a kick. The lime juice also added great flavor. Overall, not bad!

Blueberry Pie

Made this today for the second time. I added more cornstarch this time (about 5 1/2 Tbsp for 5 cups of fresh berries) and it was still just slightly soupy even hours after baking. I'd probably add just half a tablespoon more next time. I also added 1/2 tsp of cinnamon and juice from half a lemon and thought it was a great addition. Definitely use 1 cup of sugar. Overall a very good blueberry pie! It was gone QUICK!

Tzatziki Sauce II

Yummy! I've made this twice now. I used 1 1/2 tsp dried dill because I had no mint, only 1 cup of greek yogurt, and I added a tablespoon of fresh lemon juice. Served it with the Spinach and Feta Turkey burgers off this site. So good!!
