Tex-Mex Quinoa Salad

Loved the flavor! Even my husband who sometimes doesn't care for quinoa liked it. I used bottled lime juic and substituted shredded mexican for the cotija. Honestly it didn't even need cheese. I also didn't wait for the quinoa to cook and just added the other ingredients to it once it was done! Yummy!

Restaurant-Style Hashbrown Casserole

I halved the recipe and defrosted the hashbrowns in the microwave. This was delicious except the onions were still a bit crunchy and didn't taste cooked. I think they should be sauteed first so they don't taste as raw.

Baked Salmon II

WAY TOO MUCH OLIVE OIL. I think half the amount would have been fine. I marinated mine for 2 hours in a pyrex dish covered with foil, then stuck it in the oven at 350 for 30 minutes. I took off the foil and let the top brown for a few minutes. Flavor was pretty good, but subtle. I also did not like that the garlic was still a bit crunchy. I probably won't make this again.

Mexican Chicken I

Not bad! Per another reviewer, I sauteed the veggies on the stove, seared the chicken with cumin and chili pepper, then added everything else. Completely forgot about the lemon! I added cheddar cheese and fresh cilantro, and served it over rice for a complete meal. Easy, tasty, and filling!

Sloppy Joes II

My husband loved them but I thought they were just ok. I added some Worcestershire sauce and I think I added a bit too much. I also used ground turkey and fresh garlic. I will consider making these again!

Roasted Garlic Zucchini and Tomatoes

Liked it! Not amazing/special, but the heat from the red pepper paired nicely with the flavors of the basil and parmesan. I followed the recipe exactly and enjoyed it. It seemed very similar to some other recipes I've tried though. The tomatoes did seem to get a bit mushy.

Incredibly Cheesy Turkey Meatloaf

Had to substitute with feta cheese, which I didn't care for. I took the advice of some others and added bbq sauce on top. That was an interesting twist, but unfortunately didn't go well with the feta. Otherwise would have been delicious!

Balsamic-Glazed Salmon Fillets

My husband LOVED this. I omitted the white wine because I didn't have any and it was fine. I might have cooked it too long on the stove because it was VERY thick when I went to pour it on the salmon. It still tasted great though. Served with a side of roasted asparagus cooked at the same temp with the salmon! Perfect.

Summerly Squash

4.5 is a more accurate rating. I LOVED this dish, and my husband did too!! That was shocking. I used the matchstick shape veggies like other users suggested for faster cooking time and added an extra tomato. I also added 2 cloves of fresh garlic and I think that was a good addition. I sprinkled a little grated parm over the top and it was so good!! Excellent way to use up those summer veggies! Definitely make again.

Spicy Garlic Lime Chicken

Yum! I can't imagine not doubling the spices. Next time I'll cut back on the salt..it was overwhelmingly salty to me but my husband loved it. There was a nice kick to this chicken that was very well balanced. It wasn't too much at all. I omitted the onion powder (never have any on hand) and butter but used everything else! Loved it!

Fresh Mozzarella Pasta Salad

Per other reviewers, I added 2 T of balsamic dressing to the salad in hopes of adding flavor. This salad was okay. Nothing special. It was a nice way to use basil from my garden but mozzarella is expensive and I'm not sure I'd make it again.

Modenese Pork Chops

Too much butter!! It was so heavy. I subbed apple juice for the wine and it was delicious. I had very lean chops that cooked up fast so I didn't simmer the sauce for the full 20 minutes, and instead added flour to thicken it up for a gravy that I poured on the chops. That gravy saved them because otherwise they would've been so dry! I might try this again but with chicken.

Super Simple Salmon

My husband LOVED this but I thought it was wayyy too salty. I couldn't even finish my fish it was so salty. The 5 minutes/side time was perfect though. I may make this again, but decrease the salt by half.

Country Apple Dumplings

I've made these twice now as written and it is THE most delicious, satisfying dessert ever!! Last time I halved the recipe and used diet mountain dew. I think I could easily cut back on the amount of butter by a few tablespoons though. These are such a crowd pleaser and much faster than making an apple pie!

Ranch Burgers

Used 1.3 lbs turkey and only half an onion. It was good, but not great. My husband couldn't taste the ranch even though I even spread a little bit of ranch dressing on the bun instead of other condiments. Anyway, I'm not sure that I'll be making this one again.

Broiled Tilapia Parmesan

My husband liked this a lot. I had to half the recipe because I didn't have 2 lbs of fish, and I didn't have celery salt. I don't think it needed that much butter a at all. I baked it at 350 for about 15 minutes. We enjoyed it but I'm not sure if I'd make it again.

Spinach Tomato Tortellini

Can't stop eating!! I mixed a 9 oz package of cheese tortellini and a 9 oz package of spinach tortellini for more color. I also doubled the amount of spinach and used only 1/2 cup of cream. I might try to decrease that even further next time to make it a tad bit healthier! Other than the calorie count, it is fast to make and tastes awesome!!!
