Basic Corn Muffins

Delicious!! Upped the sugar to 1/2 cup but left everything else the same. The only problem was the baking time...after 11 minutes at 400F they were already browning!

Banana Oat Muffins

Dry and flavorless. I won't be making these again. I even added cinnamon and nutmeg! I substituted apple sauce for oil like other users said. I don't like the texture of the oats in the muffins..they are not cooked through but not chewy...just awful! I cook all the time and these are the worst muffins I've ever made :(

Crispy Edamame

Followed the ingredients exactly and it was sooooo delicious! These little guys are incredibly addicting and make a yummy salty snack. The only thing was I didn't really thaw the edamame under water like the recipe said...I left it on the counter as I was cooking other things and cooked it for 25 minutes at 400F. Perfect!!! Will be making again!

Parmesan Garlic Bread

This was awesome. I softened the butter and used real parmesan cheese. I pre-slice the bread (but not all the way through) and put the mixture inbetween each slice. I then wrapped it in foil and baked it. Everyone loved it!!

Seminary Muffins

Really good!! I used half whole wheat and half white. I used 3 bananas and only about 1/2 cup oats. I also added a tablespoon of wheat germ. I used about a 1/4 cup raisins and 1/4 cup chocolate chips. Didn't have any nuts. I got 20 muffins! Delicious.

All-Day Apple Butter

This is AMAZING. I used 15 apples (mostly rome beauty) and about 2 3/4 cup sugar. I added about 1/4 tsp nutmeg, used less cloves, and 2 heaping tsp of cinnamon. I let it go over night for about 12 hours, and then added more spices this morning when I took the lid off to let the water evaporate. I can't imagine using the full 4 cups of sugar. Otherwise this recipe is soo delicious!

Pretty Chicken Marinade

I'm rating this 3 stars because it wasn't a bad recipe, but it paled in comparison to other marinades. The chicken tasted pretty good and it did look pretty, but nothing about the flavor stood out!! The only change I made was using worc. sauce instead of liquid smoke (didn't have any). It was a good way to switch things up, but I won't make this again.

Chocolate Chip Banana Muffins

WOW These are so fantastic!!!! I used apple sauce instead of oil and white whole wheat flour. These muffins have the most amazing texture..they are light and soft but filling at the same time. Best Banana muffins I've ever made!

Lentils And Spinach

Surprisingly, husband and I both loved this. Very filling. Took suggestions of other users and doubled lentils and chicken broth. I also threw in a little bit of quinoa, and then used fresh spinach at the end. I upped the cumin to almost a full tablespoon, added a dash of nutmeg and cayenne pepper for some kick. DELICIOUS! We added feta on top but honestly it wasn't even needed!

Honey Mustard Dressing II

DELICIOUS!!!! I used nonfat greek plain yogurt and did have to add more honey because it was too tart. Turned out great though...my husband couldn't tell it wasn't store bought until I told him and then he was SUPER impressed. I will definitely use this as my go-to. I made this to accompany the Alice Springs Chicken recipe from this website.

Alice Chicken

VERY similar to outback! Relatively easy but looks impressive. I baked it at 350 for 30 minutes and added toppings at the end. I think the honey mustard dipping sauce is a must. I used the Honey Mustard Dressing II from this website with nonfat plain greek yogurt instead of mayo...hubby couldn't even tell it wasn't store bought! Will make again.

Sweet, Sticky and Spicy Chicken

WAY TOO SPICY!!! Per other reviewers, I coated my chicken in flour and sauteed it, then removed it from the pan and doubled the sauce. This dish was incredibly spicy even though I did NOT double the hot sauce. I might try this again with only 1 tablespoon (or less!) hot sauce next time.

Easy Honey Mustard Mozzarella Chicken

3 stars for being super moist and easy to make, but lost 2 stars because my husband didn't rave on and on about it like I hoped he would. I thought it was just okay too..not nearly as much flavor as I was looking for. I used spicy deli mustard because it was what I had on hand, but otherwise I followed the recipe as stated. Probably will not make this one again.

Amazing Butternut Squash

Totally failed to see what all the hoopla was about this recipe. The only positive was that it was a different way to serve butternut squash. Using raw onion was a huge mistake...the whole dish tasked like onions. The only change I made was I used nonfat plain greek yogurt instead of mayo and it didn't change the taste at all. Overall, this was disappointing. Will not make again.

Tender Italian Baked Chicken

Substituted fat free sour cream for mayo--LOVED IT!!! Definitely a new family favorite. Used thin cut chicken breasts- 20 mins at 400 was perfect. Thank you!!!
