Coconut Shrimp I

Loved it. We used unsweetened coconut which was okay enough but I would recommend sweetened for restaurant style taste. Make or buy a really good dipping sauce and you will want to eat this 3 times a week! We loaded our dipping sauce with pineapple. Yum!

White Sauce

Supremely inexpensive and easy to make. It is so versatile that you can add cheese or onion or pasta or bacon or chicken or tomato or all of the above and you can't go wrong. Next time I want to add butternut squash and cardamon for a fall flavor.

Andrea's Pasta Fagioli

Loved this recipe almost exactly as is. My 2 year old ate it and had fun putting the noodles (I used ziti) on each of his fork tines before taking each bite. My alterations were kidney beans instead of navy and then I topped each bowl with a few slices of Italian sausage. Paired it with Italian bread and my hubby was in heaven. Did also take the advice to boil and rinse the noodles separate before adding them. Will make this one over and over.

Lancashire Hot Pot

This was my husband's attempt at creativity. I was nervous. It was so good that we ate ourselves sick and continue to do so each time he has made it. We have made it with stock and with broth. Comes out the same to us. Otherwise he follows the recipe to a tee.

Poppy Seed Mini Muffins

Taking other reviewers' suggestion, I reduced bake time to 8 minutes for the muffins and 15 minutes for my mini loaves. Brushed on a lemon glaze made from 1/2 C powdered sugar and 4 tsp lemon juice while they were cooling. The recipe is not for Lemon Poppy Seed Muffins but I do love lemon so I doubled the lemon and added 2 Tbs lemon juice plus 2 Tbs lemon zest. I would add AT LEAST double of that next time for more zing.

Eggplant Parmesan I

I can't get enough of this dish! Hearty but not heavy. Last time I made it was when my parents were in town and my dad acted like it was the best thing he's eaten since I left home over 10 years ago. I agree that it's a great side or main dish. I eat it plain or served over a bed of pasta. My only improvement is I throw in cottage cheese if I have any but it is still great without it. Would be good with spinach, broccoli, or grated carrots added.

Pasta Pomodoro

Whatever is one step above a staple is what this recipe is in our home. We alternate vegetarian, chicken, shrimp, or (my favorite) sweet Italian sausage. Canned tomatoes seem to work just fine, but without the fresh grated parmesan, this recipe is just a bowl of noodles. Can't explain how it happens, but the fresh parmesan transforms this dish into something amazing.
