Cream Cheese, Garlic, and Chive Stuffed Chicken

Delicious! Thanks for the idea =) ..& here I go with my annoying list of "changes" lol ..but that's the fun of cooking! ..right? Started with thin cut breasts. Used Philadelphia Chive & Onion Cream Cheese mixed in my processer with lots of fresh garlic, Shredded mozz, grated parm, a little sour cream, crumbled bacon and fresh ground pepper. Dipped my breast 1st in butter and roasted garlic olive oil then in italian bread crumbs and more parm. Served with buttered corn and Stove Top Stuffing. Very rich but soooo yummy!!

Grilled Cheese Sandwich

Kraft american cheese single, plenty of real salted butter and a dill pickle spear on the side, is how you do this sandwhich, right!! & do cook slow.. on low ~ It's the key to buttery, crispy perfection! :0)

Creamy Chicken and Wild Rice Soup

This is truely restaraunt quality soup with a few additions. So easy too! I used a rotissire chicken. I do think the addition of veggies gives it more depth. I added a bag of frozen celery, carrots and onions that I got at kroger. It's called "mirepoix style blend" Worked perfectly. No chopping needed :) I used half and half and only half of the flour called for & it was still plenty thick & creamy. Also added a bay leaf, a tsp of sage and garlic powder while it was cooking through.. I think it really helped with the flavors! Next time, might add a little tyme. Served with Hawaiian Sweet Rolls. Yum!

Quick and Easy Fish Tacos

Yum! Used flour tortillas, (crisped in oven) beer battered tenders (quality counts!), shredded sharp chedder, cole slaw mix, and made a sauce out of tarter sauce, light sour cream, chopped cucumber, chopped tomato and fresh pepper. Served with a quick italian pasta salad. (rotini, italian dressing and peppers) ~ A quick, easy and satisfying change of pace. ~ Thanks for the idea! =)

Slow Cooker Pulled Pork

Use pork shoulder, butt or even loin, not tenderloin! Tenderloin is too lean for this recipe. You need a roast with some fat marbled through it to give it flavor and keep it from drying out while cooking! Delicious though! The root beer helps tenderize the meat, beautifully & I don't think it comes out tasting like root beer if u cook it long enough.. just gives a slight sweet taste to the meat. I always do a light dry rub, before putting it in & pouring the root beer around it. I Cook it low & slow..about 8 hours, basting it a few times, if i'm home. Then just drain, shred it up, discarding any fatty bits. Add lotsa Sweet Baby Ray's and cook for another hour..or two. Serve "slider" style on mini buns w/ coleslaw and seasoned potato wedges. Just started one. Does not get easier than this!

Mmmm We love these. =D The other night i used the same concept except took bbq shredded chicken (Tub of Lloyd's.. so easy) and spread it on Boboli pizza crust. topped with cheese and chopped red onion and baked. And Whala! BBQ Chicken Pizza ~ ! Soooo yummy

Four Cheese Macaroni

Mmmmmmm ~ ! After several failed attempts at delicious homemade mac and cheese, I'v finally found it. Heated 1/2 stick of butter with 2 cups 1/2 and 1/2. Salt and pepper.. Then added the Velveeta to make a nice creamy sauce. Puured over noodles and shredded cheeses. Stirred in a 1/4 C. light sour cream. No eggs. Topped with more shred ched, french fried onions and paprika. Then baked. Soooo creamy & indulgent but worth it! Make this special treat for the ones you love!! =)

Hashbrown Casserole

Been making this for years. Many requests for this dish. My mother in law taught it to me. This is one of those dishes that looks like you slaved over it but its actauly pretty simple. Only changes, I use only 1 can cream of chicken. 8 oz sour cream. 2 C shred sharp cheddar. I always use real red onion..1/4 cup. Have also added bacon on occasion and sometimes use the cubed frozen hash browns instead of the shredded. We love French fried onions. So , I top with those instead of corn flakes. Going to make a batch right now ..yum!

Flatlander Chili

Very good only change I made was using chunky salsa in place of tomato sauce...Onions, peppers, tomatos and spices all in one jar! And added a small can of corn. Served with sharp cheddar and tortilla crisps ~ Delish!

Baked Buffalo Wings

I wont use the flour next time! That's what makes them soggy. I will stick with my old method. I usually just bake them longer (closer to an hour or so ) at a lower temp 350-375. I use quite a bit of melted butter but the skin crisps up nicely. Not quite the same as fried, but their not! Also, I sometimes skip the hot sauce and mix in an itialian seasoning or ranch packet with the butter. Not the healthiest, but yum!

Best Tuna Melt (New Jersey Diner Style)

The red wine vinigar, onions and celery really made the tuna salad delish! I used Texas garlic cheese toast instead of rye. Topped with the tuna, tomato and swiss after baking the bread.

Teriyaki Pork Tenderloin

This May sound crazy to some of you.. but I up'ed the soy sauce and olive oil to 1/2 C each and added waay more garlic. Also added a tbsp of balsalmic vinager. (Used an almost 3 lb. tenderloin) Marinated for about 3 hours. We use this marinade for venison stks... Didn't realize how good it would work on pork! Turned out so suculent and moist! Yum

Grilled Peanut Butter and Jelly Sandwich

Pure indulgance! Used apple jelly and real butter, fried till crisp. Then spread another thin layer of pb on top. Served to my daughter and hubby with cold glasses of milk. Won me mommy of the year award! Next time will try adding bananas =D

Absolutely Ultimate Potato Soup

This turned out just like mom's =) !! Used thick, center cut bacon, chopped up. Center cut cooks up more meaty less fat, fixng the soggy bacon problem as some reveiwers have noted. Used extra garlic and a can of whole kernal corn. Didn't bother with the tarragon or cilantro. So thick and creamy. More like a chowder. Garlic cheese texas toast completes the meal. Perfect for these frigid Michigan winter nights ~ Family Fav! Thanks!

Garlic Chicken

Used lots more garlic ~ 1/2 oil 1/2 butter. Italian seasoned bread crumbs instead of plain and it came out perfect =D I would reccomend using thin breast. I used thin breast and only cooked for about 30 min. at 375. Turned out so moist and flavorful. Everyone wanted seconds..some thirds =) Served with Baked Ziti I (without the beef) from this site. Resturant quality meal!!
