Tres Leches for Cinco de Mayo
About this Cook
I grew up around food---from following my mom to the cooking classes she taught to watching her cook in restaurants as a kid--cooking and experimenting with food has always been second nature to me. Now that I am married and have a home of my own, I enjoy few things more than making an excellent meal for friends and family.
My favorite things to cook
I adore making hearty, stick to your ribs meals: chili, homemade sauces, stews....comfort food is the way to go.
My favorite family cooking traditions
Since I married my husband, we have begun hosting a yearly Cinco de Mayo dinner. Being an Irish girl married to a Scottish man, this was definitely out of the ordinary for me, but our dinners have become a huge hit.
My cooking triumphs
I get satisfaction every time i make something that I know someone doesn't like and i not only get them to try it and like it but ask for seconds!
My cooking tragedies
I'll never forget it...i suppose the only way to have successes when experimenting with food is by also having failures. I was 8 years old and making hamburgers. For some reason it seemed like a good idea to mix tuna fish and whole black peppercorns in with the ground meat...suffice to say, that's not a recipe i'll be posting on this site...BLECH!

Tres Leches (Milk Cake)
EXCELLENT recipe! I used a fork to poke a LOT of holes and poured the milk over the warm cake---it soaked up all of the liquid almost right away. I did add some cinnamon and citrus (orange and lemon juice) to the milk mix. I also added lime zest to the whipping cream. I topped with kiwi, papaya, and mango. Everyone adored it and my husband has even requested this cake for his birthday.

Best Grilled Margarita Chicken... Ever!
Excellent recipe! Instead of the individual margarita ingredients, i used a pre-mixed margarita (tequila and all) that i had in the fridge. I marinated for almost 24 hours, which REALLY allowed the taste to permeate the meat. When my husband took it off of the grill, i was initally disappointed because it looked like he had burned it but, to my pleasant surprise, it was the caramelization of the honey. The chicken got rave reviews and even tasted yummy the next day cold out of the fridge (great for a salad!)
