Buttermilk Pancakes II

This is the best pancake ever!! At least according to my husband & kids. I did make a couple of tweaks, but not enough that I feel it's an entirely different recipe. First, I doubled the sugar. 6T is not a lot for a batch this huge. Then I added 2 tsp or so of vanilla. Lastly, because this is the one that's probably the least important, I replaced 1 cup of the flour with whole wheat flour.

Swiss Chicken Bake

I was worried about this being really bland since there are so few ingredients, but I was in a hurry & forgot to add any other seasoning. It wasn't! EVERYONE in my family had seconds. Even my picky daughter who usually just eats the rice or pasta! I didn't use mushroom or broth, since I didn't have any. (I used water instead.) I also doubled the recipe & used provolone on one pan, because I didn't have enough Swiss. Both were excellent. I served it over brown rice with the fabulous sauce it made! Next time, I probably will add some garlic & onion, just for personal preference. I also made one other change: I baked it at 400 for about 35 minutes, since I was short on time. By far the easiest delicious chicken ever!!

The Best Chicken Enchilada Soup

My whole family loved it!! I did use salsa in place of the enchilada sauce & corn tortillas instead of the masa, though. Great way to use up leftover chicken or a store bought rotisserie chicken. Very easy & relatively quick, if you use pre-cooked chicken. Thanks!

Jamaican Jerk Pork Chops with Island Salsa

Very good! Has a nice kick, but it was a bit much for my younger kids. I served it over pasta, but it would probably be even better over brown rice.

Swiss Chicken Bake

Bierocks (German Meat Turnovers)

The only reason I didn't give this 5 stars is because I have a German grandmother who still makes her own dough. I, however, do not. I also couldn't find frozen dough, except in rolls. Instead, I bought refrigerated pizza crust and pressed it out enough to make 6 bierocks from each can, 2 cans/recipe. The kids loved helping with that part!

Easy Chicken Rice Casserole

My whole family really enjoyed this. My picky 15 year old even went back for seconds. I made this with brown rice and was worried that it wouldn't get done, so I allowed 90 minutes cook time. There was plenty of liquid and the rice was done perfectly and so was the chicken. I loved the idea of cutting up the chicken before putting it in!

Husband's Delight

This was a hit with my entire family! Not an easy task with 5 kids. My DH asked what it was called, and heartily agreed. I did make a few changes, though, both in recipe size and ingredients. I used 2 lbs of ground beef & 2 boxes of whole grain rotini (about 27 oz). I always season my ground beef while browning, usually with salt, pepper, onion, and garlic, to taste. After draining the fat, I added 1/2 chopped green bell pepper, 1 can diced tomatoes, and 1 8oz can tomato sauce. I also added 1/2 bag frozen, chopped spinach, which I do to a lot of dishes. I used a 16oz container of light sour cream and 4oz of low-fat cream cheese. I also chopped up a few green onions, since I had them on hand, and threw them in. I mixed everything together, including pasta, then put it in 2 pans and topped with 2 cups of fiesta blend cheese. I have made it in layers before and mixing it all together seems to work better for us.

White Sauce

Breakfast Casserole III

Tex-Mex Macaroni and Cheese

My family LOVED this dish! I did change it up a little bit. I used regular Velveeta mac n cheese and just cooked the hamburger with a lot of onion and garlic powders and some of the seasonings used for tacos, since I didn't have the prepackaged in the cabinet. I also added some frozen chopped spinach to get some veggies into the kids. They all raved about it. I will make this a lot, I'm afraid!!
