Individual Beef Wellingtons

5 stars! Used combo of cremini, oyster, and portabella shrooms, added a little cream...cooked exactly as directed (pre-heated baking sheet...good call)...made a bernaise and a red wine reduction of beef stock, red wine, garlic, more mushrooms, anda little more cream....not a drop leftr on the plates!

Oven Roasted Potatoes

I agree. Keep it simple. Olive oil and rosemary, bake at 350 for 50 min to an hour (usually am baking these with a chicken, so perfect to do in same oven at same time). They are easy and perfect.

Incredible Chicken

the chicken turned out juicy as heck, but the coating didn't work for me...it made the skin kin dof soft and mealy, and added very little flavor...maybe I did something wrong.

Bacon and Parmesan Penne Pasta

Did recipes exactly as written, but then added halved cherry tomatoes and a couple leaves of fresh basil at the end, mostly for color. Both added GREAT flavor to pasta as well!

Super Easy Seared Ahi Tuna

I laughed when I was done and how easy this was. I followed intructions to a "t"...whole process tookall of 40 seconds....second time I made it I served it over cilantro brown rice I had made. Delicious and healthy!

Triple Dipped Fried Chicken

I bought a deep frier just to try this recipe. It was soooo good. Not very spicy, as others suggested, but you can always kick it up with your own spice mixture. I've done this now with legs, thighs, and boneless strips...all good. I also use 100% canola oil...expensive, but healthier. I also used Panko bread crumbs in the wet mixture....had a REALLY good flavor, but you still have to add alittle flour, or the mxture will be too wet.

Mozzarella Chicken

Unbelievable! Used Panko brea crumbs, and stuffed with combo of provolone and mozzerella. Didn't make any other changes. Completely awesome and easy. This is also the kind of recipe that is so versatile, next time I might try a combo of goat cheese and fresh basil, or mozzerella and asparagus tips, etc. Really, really good!

Poached Salmon

I didn't change a thing...this had to be the EASIEST piece recipe I have ever made, and it was extremely flavorful. I used a homemade tomato-bernaise sauce that I had leftover from another meal, and becuase of the tarragon in the sauce, it was the perfect complimenting flavor! had this twice this week already

Tomato-Cream Sauce for Pasta

WOW! What a great sauce! So here's what I did...like another member, after cooking tomatoes, onion, garlic and spices in saucepan, I put mixture into blender and pureed. Then I put back into saucepan, stirred in 3/4 cup nonfat milk (in place of heavy cream) and butter. I left out sugar altogether. Didn't need it. I added a small amount of grated parmesan cheese to give it an extra kick. What I got was a sauce that tasted like it was full of fat and calories, but it was actually almost fat free and very healthy! Not to mention, it was EXTREMELY easy to make. Definitely a keeper!

Oatmeal Baked Chicken

I REALLY wanted this to be good...I am on the quest for the ultimate oven baked crispy chicken...this just didn't work that well for me. I tried to spice it up, I added honey to the milk to help outmeal stick to chicken, etc....I just can't get a cripsy oven bake with anything I try.

Chicken Tortilla Bake

So I made this almost exactly as the recipe suggested...except that I added a can of black beans to the mixture and mixed half cheddar and half mozzerella. I did crush some tortillas over the top as someone suggested....I wouldn't do that again. Overall, very authentic taste. House smelled great! Definitely serve with sour cream and salsa.

Original Nestle® Toll House Chocolate Chip Cookies

I made this recipe with Splenda Sugar Blend (50% sugar, 50% Splenda), and SmartBalance 50/50 Butter Blend, to try to be a bit healthier, and they turned out great! I was nervous, but really happy when they were done.

Easy Chicken Satay

I would give this 10 stars if I could! I developed a peanut allergy as an adult, but grew up with peanut butter as my favorite food. I finally found an almond butter that tastes exactly like peanut butter, and couldn't wait to use in this recipe. It was unbelieveable! I could make this recipe once or twice a week and never tire of it. I served this over brown rice. Amazing.
