Easy Swedish Meatball Sauce

LOVED LOVED LOVED this. Super-easy, and exactly what I was craving. I always add nutmeg to any swedish meatballs recipe (I even add it to variations of meatloaf), and the nutmeg just kicked it up to 6 stars. We did serve it over egg noodles, with a side of steamed asparagus. Doubled the recipes for family, and not one meatball or drop of sauce was left!!!!!

Mom's Favorite Baked Mac and Cheese

I really liked this, and it was really easy. I wanted it really creamy, so I used mozzarella in place of American cheese, and substitutes 1/2 cup heavy cream for 1/2 cup of the milk. Very delicious, but felt it still needed "something". Like a little heat or spice. I'm not sure what I'd use...a tabasco-type product, a diced jalapeño, or chili flakes / powder. I'd LOVE a recommendation from a member!!

Baked BBQ Baby Back Ribs

I made these on the 4th of July. I took a chance and made 4 racks of ribs...2 pork, and 2 beef racks. I'd never made beef ribs before, so I cooked them exactly like the pork ones. Followed recipe exactly...used Famous Dave's rib rub as the dry rub. Best ribs I've ever made, and guests said they were tastier than any restaurant or smokehouse they had been to!! Thank you Chef John.

Ham Tetrazzini

When I first saw this recipe, I chuckled a little at the simplicity.....yet once I made it, it was AMAZING! Pretty much made as written....did add garlic with onion (probably more onion than asked for), milk instaed of water (KEY for creaminess)....and a little liberal on the cheddar...lol. But this was seriously really tasty and a GREAT way to repurpose ham!!! I new fave!!

Greek Salad III

Made this as a side for Christmas dinner for almost 20 people...with all the rich food, it was an instant hit, and over the next day, it was devoured...totally healthy, totally delicious....the perfect compliment to a meal!! Or on its own, I would suppose!!

Slow Cooker Chicken Stroganoff

Kept to original recipe, with the only change being adding 1/2 a block of cream cheese instead of the whole thing, and a couple of big dollops of sour cream to make up the difference. Oh, and I added fresh chopped mushrooms as well, because I thought they would taste good with this recipe. Serves over egg noodles. It was very easy, house smelled amazing, and was extremely delicious! This instantly goes into regular rotation.

Individual Beef Wellingtons

5 stars! Used combo of cremini, oyster, and portabella shrooms, added a little cream...cooked exactly as directed (pre-heated baking sheet...good call)...made a bernaise and a red wine reduction of beef stock, red wine, garlic, more mushrooms, anda little more cream....not a drop leftr on the plates!

Oven Roasted Potatoes

I agree. Keep it simple. Olive oil and rosemary, bake at 350 for 50 min to an hour (usually am baking these with a chicken, so perfect to do in same oven at same time). They are easy and perfect.

Incredible Chicken

the chicken turned out juicy as heck, but the coating didn't work for me...it made the skin kin dof soft and mealy, and added very little flavor...maybe I did something wrong.

Bacon and Parmesan Penne Pasta

Did recipes exactly as written, but then added halved cherry tomatoes and a couple leaves of fresh basil at the end, mostly for color. Both added GREAT flavor to pasta as well!

Super Easy Seared Ahi Tuna

I laughed when I was done and how easy this was. I followed intructions to a "t"...whole process tookall of 40 seconds....second time I made it I served it over cilantro brown rice I had made. Delicious and healthy!

Triple Dipped Fried Chicken

I bought a deep frier just to try this recipe. It was soooo good. Not very spicy, as others suggested, but you can always kick it up with your own spice mixture. I've done this now with legs, thighs, and boneless strips...all good. I also use 100% canola oil...expensive, but healthier. I also used Panko bread crumbs in the wet mixture....had a REALLY good flavor, but you still have to add alittle flour, or the mxture will be too wet.

Mozzarella Chicken

Unbelievable! Used Panko brea crumbs, and stuffed with combo of provolone and mozzerella. Didn't make any other changes. Completely awesome and easy. This is also the kind of recipe that is so versatile, next time I might try a combo of goat cheese and fresh basil, or mozzerella and asparagus tips, etc. Really, really good!
