Easy Meatloaf

I am NOT a meatloaf fan at all usually. The meatloaf I remember from growing up was dry with baked ketchup on it. BUT my 20 year old culinary student wanted to try making it so I agreed after looking up this recipe. This was SO good. We followed the instructions exactly and it was the BEST. We adjusted the serving size to 10 because all I had was a two pound package of meat. There is plenty left over and I think this is going to make terrific sandwiches tomorrow!

Tangy Turkey and Swiss Sandwiches

I cut this down to one sandwich because it was just me eating and I wanted somethind different. I already had the turkey and swiss in my fridge. This was SO good. I am not a "thyme" person so I cut it in half. It was perfect. I also used country white thick sliced bread (what I had) and put it in the oven for a few minutes on each side. I will definately be making this again!!

Baked Ziti I

First let me just say I am not a big Italian/pasta person but my husband loves it so I decided to try this tonight - mostly because I was looking for something I could make without having to go to the store. This was AWESOME! I followed the recipie exactly with just a couple of exceptions: I layered the sauce before the cheese as recommended by the other reviewers and I covered the dish while it was baking. I uncovered it the last ten minutes so the cheese would brown. I also cooked it in a deep dish casserole dish - this made enough for all four of us big eaters to have two plates full plus we have enough for dinner tommorrow! The sour cream was excellent - I dont like the texture of rigotta cheese so I loved using this instead. Definately a keeper.

Restaurant Style Chicken Nachos

I wasnt sure how to add to my previous review so I thought I would do it this way. I did take the other suggestions and baked my chips in the oven by themselves for just a little bit. They were not soggy at all!!

Best Ever Banana Bread

I was a little skeptical about this when I took it out of the oven. I ended up having to cook it for about one hour and five minutes but my oven might be a little off. Even then it looked like I had over cooked it on the outside and I almost threw it out. I decided to cut it and try it. This is the BEST banana bread I have ever had! It was a little crunchy on the outside and really, really moist on the inside. I didnt have buttermilk in my fridge but I made my own by adding one tablespoon of vinegar to a cup of milk and letting it sit for a minute. I will definately be making this again!

Easy Chicken Enchiladas

Yum!! My husband usually won't touch anything with sour cream in it or Mexican food but I love both. We had left over chicken from baked chicken last night so I figured I would give it a shot. I didn't use as much sour cream as it called for (about 1/2) because I figured he would fuss. About a cup was just perfect. I also added mild enchilada sauce and 3/4 amount of chilis (I would have used the whole can but again he doesnt do spicy) These were SOO good. My husband ate all of it and asked for more! I will tell you that 10 enchilada's is ALOT. It didn't seem like it with 2 cups of chicken but there are four of us and I still have 5 left because they were huge (we are pretty big eaters too). Leftovers for tommorrow night!!

Amish White Bread

This bread is awesome! I had a bread recipe that had to rise overnight which isn't always practical. I wanted to try this one because it seemed quick but I was skeptical. I took the other reviewers advice and reduced the sugar to / cup and it was perfect!. I brushed the top of mine with melted butter to give it that golden brown look. I will definately be making this again!

Apple Crisp II

I followed the recipe exact with the exception of the water. I omitted it like everyone said to and it came out awesome! I used Granny Smith apples so the sweetness was just right.

Oven Fried Chicken III

Wow! I was skeptical when it said mayo but I was willing to give it a try. It was completely juicy and the spices were perfect. I used three large bone in breasts since we are not dark meat people. I used just enough mayo to coat the chicken (less than the cup it called for) and it came out perfect!
