Best Spanish Rice

Special Turkey Gravy

I found that you really need to follow these directions and make sure the Roux gets really golden. Everything is spot on. Made a great gravt, but I did add more flour to thicken it up more.

Yummy Tater Tot Casserole

This is a great basic recipe that you can easily tweak to your own tastes. I recommend, as a lot of people did that you reduce the amount of butter to a couple tablespoons otherwise it gets soggy. Also use a high quality sour cream, so that its not watered down. I tried it originally as written. The second time, I reduced the butter and added garlic. Instead of a regular onion, I tried green onions and did not saute' them and added two cloves of garlic. Just mixed everything together. And I used Ritz crackers instead of chips. It was really delicious. My next time I'm going to go back to the regular onion and try adding ortega chilis. Thank you Jana!

First off, you don't need the olive oil as there is enough fat in Chorizo and ground beef. The cinnamon is a little overpowering so I would reduce that next time. This tastes like a fancy sloppy joe. I chopped up the raisins since I dont like raisins and followed someone else's suggestion to simmer the raisins and capers with the mixture so the flavors could meld more. I followed the recipe to the letter with the omission of the almonds and olive oil. Its a good hearty recipe. We served it over white rice. Will make again with less cinnamon and will try adding achiote to go with my puerto rican heritage.

Awesome Slow Cooker Pot Roast

This a great recipe and easy to cut in half. I season the beef with kosher salt and cayenne pepper as my husband is from Louisiana and likes spice, as do our kids. I lightly flour the roast and brown it in olive oil to seal in the juices and flavor. This is an important step and it only takes a couple minutes. The only change was I added a tbsp of worstershire. I serve over white rice, mashed potatoes or a baked potato. Thanks for an easy great recipe.

Texas Pork Ribs

For the people who say the recipe is too salty...DO NOT USE TABLE SALT. Always use Kosher salt or Sea Salt. Thank you so much for a wonderful rub recipe. Like most people I didn't have the patience to make the sauce. I didnt have paprika so I substituted it with chili powder and added about 3 times more cayenne than called for. Marinated for 24 hours and then baked them on 275 in a convection oven covered with foil for 3 hours. At 2.5 hours I poured 1 can of beer over the ribs (cuz I was worried they were going to be too spicy). Recovered and baked for another 1/2 hour. Then to the charcoal grill. I added a tablespoon of liquid smoke to sweet Baby Rays bbq sauce and basted the ribs. Cooked on 225 for about 30 mins. basting every 5-7 mins and flipping. The meat fell of the bone. The rub is absolutely delicious. As written not spicy at all.

Banana Bread V

This makes a very moist banana bread. I followed the directions only adding 1/2 teaspoon each of cinnamon and cloves and vanilla. I omitted the walnuts because I didn't have any. My baking tin was a 8x4 so I made one loaf and one pan of 12 mini muffin cups. The muffin cups cooked for 35 mins and the loaf cooked for 50 mins. Very moist and very yummy. Thank you.

World's Best Lasagna

This is an excellent recipe. If you want to cheat and use spaghetti sauce it works just as well. I followed the directions and added nutmeg to the ricotta as suggested by several users. I used Barilla lasagna noodles and didnt cook the noodles at all. Its seems to bond the lasagna better so it doesn't fall apart. Thanks for a wonderful recipe.

Slow Cooker Chicken Taco Soup

This is a great recipe. I tweaked it in the following ways. I use two 15 oz cans of diced tomatoes and omitted the tomato sauce. I added a packet of ranch dressing mix and two cloves garlic, minced. For the beans I used one can of Cuban style black beans and one can of Chipotle pinto beans. I also added a large can of diced ortega chilis. I use 4 chicken breasts and halfway thru I chop the breast up and add them back to the pot. It has a kick, great for a rainy cold day! We serve ours with white rice, either on the side or the chicken mix served on top.

Turkey Brine

I use this brine every year for my holiday turkeys and also for chicken. My variation is as follows. I use chicken broth and apple juice and kosher salt. The trick is to simmer so the salt is fully dissolved. After brining, I follow "The World's Best Turkey" by Sarah on allrecipes. I put garlic butter under the skin and inject my turkey with Tony Chachere's cajun butter. An apple and onion in the cavity, into the turkey bag breast side down with a bottle of champagne. Half way through flip the turkey over for an hour then remove the bag to brown the skin. I have this down to a science and am not wavering. Haha. Thanks for a wonderful recipe.

The Best Meatloaf

This is a very basic recipe. I added 1 1/2 cups of cheddar cheese and Bourbon steak slather instead of A1. I also omitted the bell pepper. I added fresh garlic also. Served with mashed potatoes and gravy. Delish!

Grilled Okra

This is a wonderful way to prepare okra or any type of squash I'd imagine. I took other reviewers suggestions into account. I poured the butter over in in a bowl and added about 1/8 cup creole seasonings. The grilled charred taste is awesome. Thanks for a simple recipe that tastes great.

Famous Garlic Pork Chops

This is an excellent recipe. Forget shake and bake. We used the Costco 1" boneless pork chops mallet tenderized. Two eggs is enough for four pork chops and I used Ritz Crackers. I used garlic powder instead as my family are not big salt users. I followed some users ideas and took the tin foil off at the last 10 minutes to brown up. Phenominal recipe. I tried this recipe again and opted to marinate the pork chops before breading them. I salt and peppered them, then added fresh chopped garlic and marinated for a couple hours. Then followed the recipe the same. Turned out more flavorful.

Broiled Tilapia Parmesan

I love Tilapia and searched for a different way to prepare it. This recipe is flavorful, quick and easy. I have made it several times. If you dont have celery salt, you can substitute it for seasoned salt. This is an excellent way to prepare tilapia or any type of white fish.

Cream of Mushroom and Soy Sauce Pork Chops

Like others have said, you wouldn't expect the ingredients to go together well. But they do. I halved the soysauce because I don;t like salt. I rubbed the chops with the brown sugar and then placed them in a giant ziplock bag with the soysauce and flipped them over 3 times over a 2 hour time. Then I followed the rest exactly. Served with a pot of steamed white rice...It was quick and easy and gone in a flash. My teenage son ate three...he loved them and I did too. Thanks for a great easy recipe.

Cornish Game Hens with Garlic and Rosemary

This recipe is fabulous and I am going to attempt it on a whole chicken later. I cooked two hens that were 22 oz each. After slicing the lemon into quarters, I inserted one piece into each hen and added the remiaining lemon juice to the wine mixture for basting. I also reduced my temperature about 15 degrees. The result was a tender, delicious dinner. The sauce was perfect and added the cooked garlic to some red mashed potatos. Terrrrrrific!

Marinated Tuna Steak

Wonderful recipe followed it exactly. I marinated two steaks for 48 hours, a little too long the flavor overwhelmed the tuna. I think next time I would only do it for 24 hours max. But the flavor was wonderful. Thanks for a great recipe.

Dinah's Baked Scallops

After reading others reviews, I decided to try this recipe. I added cayenne pepper as some others stated. They turned out ok. I did broil them to crispy them up a bit otherwise they would have been soggy. I did only "drizzle" the butter mixture and not soke them. They still were a little soggy. I think making sure that the scallops are dry before you roll them in the cracker mixture would help. These weren't bad but nothing to rave about. Definately an easy recipe for people who don't cook a lot. Probably perfect for a bachelor trying to impress a date. They do plate well.

Puerto Rican Meat Patties

This is a great simple Puertorican recipe. I added two packs of Sazon for that authentic taste. I omitted the bell pepper because my family doesn't like it. I think next time I will add a can of sliced black olives and also use only 1/2 a bunch of cilantro. I used the egg roll wrappers and wrapped them like egg rolls. They only needed to be in the oil for about 5 seconds each.
