Wow, I can't believe so many people rated this 5 stars! My version was only slightly tweaked--no beans (didn't have any kidneys on hand), frozen spinach instead of fresh, less tomato sauce. Turned out so bland! Hearty, though, which was nice. Definitely more like a veggie stew than soup. Also, as stated, the soup yields WAY more than 8 servings--maybe closer to 16 or 20 servings. Next time, I'd reduce the amount of servings, as well. If I make this another time, I will triple the spices, quadruple the garlic, add more broth, and probably cook for longer. I only let the soup stew for 1.5 hours, so maybe the flavors hadn't had a chance to fully meld or something. Overall, kind of a let down--I'm going to keep searching for a minestrone recipe that suits my tastes.
