Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Mmmm, this was delicious! Some of the other reviews criticized the cumin, so I just sprinkled a few pinches on top when I was stirring in salt and pepper. Very tasty and simple to make!

S'more Brownies

Full disclosure: I didn't measure out the toppings, I just mixed a proportion that looked right in a bowl before topping the brownies, so I had a pretty perfect blend of toppings. I didn't think these were too rich at all once they were done. Rich, yes, but not too rich. Maybe that's because I had less topping than the recipe calls for, I'm not sure. The main problem I had with this recipe is that it didn't keep for longer than 2 days--after 2 days the graham crackers got soft and stale.

Baked Pork Spring Rolls

Honestly, I wasn't crazy about these--I didn't really like the sauce/spice mix used to flavor the filling. I made these for a party the night before, and fresh out of the oven, they are tasty and crispy. The next day, however, they were weirdly soggy and not crispy at all. They still got totally snapped up at the party, though, so clearly some people liked them.

Best Steak Marinade in Existence

MMMMMM! This really is the best steak marinade in existence! I'm thoroughly impressed with how tasty and easy it is to make. I didn't have any garlic powder/dried garlic, so I just threw in a coarsely minced large clove into the blender. Also subbed fresh basil for dried. Oh, and I scaled it down to 2 servings to marinate a single 3/4 lb grass-fed porterhouse steak--the perfect amount for an awesome steak.

Best Spanish Rice

Following this recipe exactly, it's on the bland side (yet still somehow really good). Next time, I will use a spicy salsa and add some cumin and red pepper flakes, maybe a can of green chilies. Definitely a keeper, and really easy (and affordable) to make an organic version!

Key Lime Pie VII

This recipe is super easy and quick--even if you make the graham cracker crust from scratch and freshly squeeze the limes. Five stars for speedy-fastness. Taste, on the other hand, was three star worthy. I thought this recipe was too sweet and rich with a heavy, creamy texture. I guess my preference leans towards a lighter, more refreshing key lime pie with a fluffier texture. Overall, not bad, but I won't be making this recipe again unless I need to put together a pie in half an hour or less.

Wow, I can't believe so many people rated this 5 stars! My version was only slightly tweaked--no beans (didn't have any kidneys on hand), frozen spinach instead of fresh, less tomato sauce. Turned out so bland! Hearty, though, which was nice. Definitely more like a veggie stew than soup. Also, as stated, the soup yields WAY more than 8 servings--maybe closer to 16 or 20 servings. Next time, I'd reduce the amount of servings, as well. If I make this another time, I will triple the spices, quadruple the garlic, add more broth, and probably cook for longer. I only let the soup stew for 1.5 hours, so maybe the flavors hadn't had a chance to fully meld or something. Overall, kind of a let down--I'm going to keep searching for a minestrone recipe that suits my tastes.

Layered Chicken and Black Bean Enchilada Casserole

A good, solid recipe. I only used one can of enchilada sauce because another one would have overflowed my 11x7 inch pan, but next time I will use a larger size pan and use both cans because the result as a tad dry. Also, I prefer my sour cream to be cold, so I served it as a side--this may also have affected the moisture content of the dish. All in all, the final product was also slightly bland--next time I think I'll throw in some more spices and garlic.

Basque Salad

I hoped this would be tasty because it contains such a lively and tasty mix of vegetable, but the dressing with this recipe is awful. The amount of dressing was completely disproportionate to the salad--way too much. Also, the dressing itself was much too oily and bland. Next time, I will definitely use a different dressing with the solid vegetable premise.

Caramel-Filled Chocolate Cookies

These are great fresh, but the caramel centers harden and become rather unpleasant after a few days. I prefer a tasty chocolate chip cookie over these any day.

Avocado Panna Cotta

By itself, the this panna cotta was a 4 star recipe: good but not great. It's very delicate but good. With the other reviewers suggestion of adding a some dark chocolate and fruit (I added strawberries), this becomes a 5 star recipe. The chocolate and fruit make a nice contrast to the mild creaminess of the panna cotta.

Black Bean and Salsa Soup

this was tasty and easy despite my modifications to the recipe based on what i had on hand. i mixed 1 can of trader joes cuban black beans plus 1 can of regular black beans (food processed) with 1.5 cups of beef broth and 1 can of kroger brand italian seasoned diced tomatoes and sprinkled with some paul prodhomme's magic no salt seasoning. let it simmer for 5 minutes, and then served topped with crushed tortilla chips and a dollop of homemade guacamole. very good, though next time i would go with salsa over diced tomatoes.

Pumpkin Apple Streusel Muffins

This muffin recipe was successful, even though I didn't do the streusel topping. The muffins are very sweet, next time I will cut down on the sugar by maybe 1/2-3/4 cup. Good taste, but not outstanding. Could be more pumpkin-y.

Cream Cheese Frosting II

Like other reviewers, I cut the cream cheese down to just one 8 oz container. Used little less than 2 cups of sugar and 1 tablespoon of vanilla. So delicious! I can't wait to try this flavored with other extracts, I think it would be great with rum or almond flavor.

Imitation Meatloaf

This was very mushy--when I tried to cut slices of the loaf I failed horribly, had to scoop out with a spoon instead. Maybe it was undercooked? Decent taste, but not amazing. Overall, good but not great.
