Peach Muffins

I did not care for this recipe. Made exactly as written: the middles sink, and it's hard to remove them from the pan. Wayyy too much oil.

Zucchini-Chocolate Chip Muffins

Perfect! As another reviewer wrote, it's light like a cupcake. I may add oats next time, to make it a heartier breakfast muffin. Even without oats, it's a great breakfast for those rushed school mornings!

Chocolate Zucchini Cake III

Like another reviewer suggested, I cut the oil to 1 cup and it still turned out fantastic! I topped it with Hershey's chocolate icing (recipe on their baking cocoa canister.) Next time, I think I'll ice with buttercream or peanut buttercream. Thank you for this recipe!

Leftover Turkey Patties

These were pretty good, even my picky kids liked them! A few changes: saltines instead of breadcrumbs; added a little Adobo; 1% milk worked great in place of the half & half.

Aunt Kate's Strawberry Cake

I doubled the recipe to make a 9x13 cake, and it's just too dense & not sweet enough for cake. This would make a great strawberry muffin recipe, though. Sorry, it just wasn't a hit in my house.

Carrot Cake of My Dreams!

Great recipe! I made a few changes. I didn't make the glaze. I didn't have ginger or Egg Beaters. I used 4 whole eggs. I cut the amount of oil in half & substituted applesauce for the other half. Score one for Mom: my kids had no idea they ate their veggies for dessert!

Kid-Friendly Wheat Bread

Perfect sandwich bread! Soft bread & crust, but firm enough to hold up while slicing thinly for sandwiches & toast. I made 1 loaf & some sticky buns, since I had to roll it out, anyway. Both were a hit with my husband & 4 yr old. It didn't need to bake more than 30 min. in my oven (15min @ 400F, 10-15min @ 350F.)

Giant Chocolate Chip Cookie

My 1st attempt has turned out unbelievably perfect! Yes, it's the Nestle Toll House recipe, but the bake time was extremely helpful. I used a 12" round pizza pan and put the extra dough in the freezer.

Valentino's Pizza Crust

This is good if you like cake-like pizza dough, like Pizzeria Uno's. So my husband liked it a lot. I prefer a chewy crust more like the Philly/Jersey pizza I grew up on.

I used the low-sugar Sure Jell (changes: 4 c. fruit, 3 c. sugar), and the recipe is AWESOME. It makes me wish I had vanilla ice cream in the freezer!

These turned out great! I didn't have lemon-lime soda, so I used seltzer and added 1 t. lemon juice (in case it was needed to "activate" another ingredient. Turned out great!
