Island-Style Fried Rice

WOW - delicious and so easy to make. I added some petit peas for extra veg & topped with chives. Not a fan of spam so I bought a ham steak and diced it and added it to the nearly cooked sausage. My husband said he would never eat plain rice again - what have I started!

Creamy Beef Stroganoff

a great base recipe. I left out the mushroom soup and added creamy plain Greek Yogurt, sauteed mushrooms, onions and 1 garlic clove. S & P to taste. A good way to use up an inexpensive steak - omit the hamburger, take slightly frozen steak and slice thinkly and saute with mushrooms etc.

We love fresh, frozen veg is a 2nd choice - then canned. So, I cooked my chosen veggies al dente. Added just a little more Rosemary and it was delic/

Chicken Pot Pie I

I like to try the recipes as presented but found this quite bland for our taste and would give it 2.5 stars. The 2nd time I made this dish I made my own cream of chicken soup (recipe from here) I added fresh thin sliced carrots, frozen petit peas, red bell pepper & baby spinach. I spiced it up considerably with spices to our taste and added some green parsley from my garden. Awesome and the end result 5 stars

Yummy Sweet Potato Casserole

This was so quick and easy to make up, and was a hit. I cubed and boiled the potatos, but next time may try roasting them or quick cook in the microwave. Had lots left over so will make a light topping again and heat.

Pear and Pomegranate Salad

Absolutely delightful salad. Will definately make again as everyone loved it. I don't usually change a recipe the first time i make it but as this is a winter salad, I thought I'd go with a little lettuce, spinach and small baby bok choy leaves. I do love a combination of greens in my salads. I sprinkled very lightly with candied almonds on top. A real hit

Bacon Wrapped Dates Stuffed with Blue Cheese

Everyone loved these, I will definately make again and again. I used a thin slice maple bacon, for faster cooking, had it in my head that goat cheese was req'd when shopping and the goat cheese was wonderful. What an explosion of flavour. This reciped is quick and easy - make ahead and have ready to pop into oven.

After reading the Ingredients I realized too much cheese so rather than cut back I bought more mushrooms. Followed reciped to the T except topped after cooking with a shrimp and small sprig of Dill Weed. Delicious - will make these many times as an appy

Wonderful dish, lots of flavour, aroma and very quick and easy to prepare. I would definately make this again. Followed recipe as written, but next time will try a sweet potatoe in the mix.

Delicious Ham and Potato Soup

So quick, easy and totally delicious - this is one of the best potato soups I have tasted and will definately make again. I did not have bouillon so I used q can chicken broth and balanced the remaining liquid with the water for a ttl of 3 1/4 C water. Served with grilled cheese sandwiches - a hit with my family

Rich and Creamy Tomato Basil Soup

I've always made my own soups, so was delighted to find such a yummy tomato soup. A little rich, but don't skimp on the cream or try half n half - it just won't be as delicious. Try it as it is after all you are not going to have this every day and a little self indulgence never hurts.

Meatloaf Muffins

Yummy - however as I don't care for canned soups for many reasons, I cooked up some veggies ie carrots, celery, corn until nearly fork tender and used the veg broth. equivalent to what you'd have in canned soup. This was more to my liking as I knew what was in the "soup"

Roast Leg of Lamb with Rosemary

This recipe is delicious just the way it is. I did add juice of 1/2 lemon to the marinade as well as the req'd zest. I wanted to be sure the lamb was very tender. This is one of the recipes you can make for the first time for guests and be confident it will be perfect.

Cranberry Glazed Pork Ribs

Love Cranberries!I buy several bags of fresh when available and freeze for future use. Fpr this recipe I boiled up approx 1 c fresh Cranberries, removed enough berries before straining to sprinkle over meat after cooking. Straining left me a nice clear glace which is what I was after. This is also totallt yummy on chicken breasts and rotisserie chicken - place glaze on chicken about 30 min's before cooked - also makes a delic marinade
