This is good, but as a side dish, not a main dish. It's a little bland by itself but pairs up nicely with a main dish that has bold flavors. I had it with breaded veal that had a wine/lemon sauce so it worked well. Next time, I might add some peppers in with the onions, garlic, and mushrooms just to give it a little more flavor.

Veal Scaloppini with Lemon Cream Sauce

I thought this was good. Next time I will add a little more cornstarch (so the sauce is a bit thicker) and use less wine so that it's more lemon-y than wine-y.

Chicken Tagine

It was delicious even without a little kick to it though. I left out the eggplant and cooked on high for about 2 hours and then turned down to low for another 3.5 hours. Also, there's no need for carrots to cook that long so I didn't add them in until a couple of hours after the chicken had been cooking. They turned out perfect and the chicken was very tender. I served the dish with mashed potatoes instead of rice.

Three Bean Soup

What I like about this recipe is that it's super easy, makes a lot, and the type/quantity of beans can easily be altered. I forgot about the oregano, but it still came out good. The mozzarella cheese made a big difference.

Arkansas Green Beans

These are good. I used frozen beans and cooked them on the stove first. So once I put them in the oven with the other ingredients, I didn't leave them in for 40 minutes. Since canned beans are already soft, I would recommend not leaving them in the oven that long either.

Sweet Potato Souffle III

This was very good. The topping had too much brown sugar though - maybe 2/3 cup would be enough. I added some lemon extract, nutmeg, and cinnamon to my potatoes and they came out fantastic.

Dave's Georgia Black Eyed Peas

I like my peas in a thick juice and this was kind of watery. I used an oval-shaped slow-cooker so maybe I didn't need as much water as the recipe called for. They were done in 4 hours too. The peas were soft enough without being mushy but they weren't as flavorful as I'd hoped. I might used some smoked meat next time instead of bacon.

Honey Carrots With a Hint of Ginger

These were okay, just way to sweet considering carrots already have a natural sweetness. I'm going to leave out the lemon next time, maybe use less honey and add a little water instead. I stick of butter was plenty.
