Zippy Shepherd's Pie

Yum! I didn't use cheese and I made a white sauce instead to pour on top (butter, flour, stock). I scallop cut the potatoes instead and partially boiled them before putting them on top, as another variation instead of mashed potatoes. Yum!

Orange Chicken Stir Fry

So easy to make! I used fresh orange juice (from juicer) but you can just store bought. I grated finely a tsp of ginger, freshly grated finely 1 Tbsp orange zest, and added 5 garlic cloves coarsely chopped. I first cooked the chicken thigh pieces (dipped in egg white, and then in corn flour mixed with garlic powder coating the chicken). keeps it more tender and moist and sauce sticks to the chicken better with this coating. Veg used: carrots, cauliflower, onion peas. Yum! Next time: I might add a tsp of chili flakes for some heat!

Greek Pasta Salad I

Great, easy recipe that I whipped up in no time! I heated up the vinagrette in microwave for 30-60 seconds so that the sugar dissolved into the mixture. I also used Apple Cidar vinegar and regular White Vinegar instead of Red Wine Vinegar (I didn't have it) and it was delicious! Definitely have it sit in fridge for AT LEAST 2 hours for the flavours to really soak into the pasta. It gets better the longer it is kept in fridge (if you can make a day ahead, that would work, but I tend to like having crisp veg, not soggy, so it's really a toss up...

Scalloped Potatoes and Onions

I really liked these! They were so simple and I love that they were pretty much dairy-free. The chicken stock adds a nice flavour. I added more salt than asked. It needed more salt. And I removed the foil the last 15 minutes to brown the tops more.

Blueberry Muffins II

These were S00000 delicious!! I did it exactly as the recipe said, and they turned out marvelously. I did it twice. Both times I just made large muffins so they just made 12 instead of 18. Same cooking time. I also tried it one time with mixed berries. Same amazing results! Oh and I also tried it with rice or soy milk for those with lactose intolerance. Yummy!

Flourless Peanut Butter Cookies

Delicious! I quadrupled the recipe for a big group and some are need gluten-free options, so this was perfect :) I also used crunchy peanut butter which added some nice texture. Yummy and simple.

Coffee Chocolate Chip Cookies

Delicious!!! Coffee lovers this is a great little twist to the regular chocolate chip cookie! I used about 2/3 instant coffee and a few teaspoons of regular ground coffee to kick it up a notch. Next time, I might put even more coffee in it! I didn't use almonds (didn't have it in my cupboard). And next time I might even add white chocolate chips for colour contrast. Yummmy!!

White Chocolate Chip Oatmeal Cookies

DELICIOUS! I didn't use the nuts. And I just used a bit of margarine and substituted the main portion of butter with vanilla yogurt! I also used only brown sugar instead of brown and white sugar. Yummy!!! I used a mix of white and brown chocolate chips. Moist and fluffy cookies that have a great taste!

Best Ever New Zealand Pavlova

Yummy! I do have to say that I tried 2 different recipes on the same evening to make a double batch and to compare, and I liked the other recipe better. This one is a bit too complicated (the other is SO simple: just 4 egg whites, 1/8 tsp cream of tartar and 1 cup sugar and 1/2 tsp vanilla, baked at 225F for 1 or 1.5 hr.)... Anyway, this one didn't fluff up as much (I think its the 2 tbsp water that made it not stiffen as much). Also, it cracked quite a bit. The other one that I just mentioned was smooth and held its shape very nicely. Either way, you can't go wrong with this pavlova... very deliciou!

Poppy Seed Dressing II

Delicious! FUN COMBINATION OF RECIPES HERE: I decided to combine the Poppy Seed Dressing I and II recipes, one being more traditionally vinegrette, and the other more contemporary milky/creamy dressing. Here's what I did: I substituted honey instead of sugar. Then I did the oil and cider vinegar and I used wholegrain dijon mustard and then added the lowfat mayo and milk (but less than the recipe calls for) and blended it together. Then added the poppyseeds later. Delicious mix, making a creamier version of the vinegrette! Great with spinach or other green mix with mandarin oranges, nuts, or other berries, and chicken!

Creamy Rice Pudding

Yummy! I think the only thing I would change is take out the egg. I think it's fine without it. I also added the cinnamon early on, but I think next time I would add the cinnamon in at the last minute so it doesn't darken the rice, but I do like the cinnamon in it :) Good recipe!

Apple Crisp III

Really delicious and easy-to-make apple crisp! I'll definitely use this again! I, also, used half brown sugar and half white sugar and also used OJ instead of water, and added a tsp of vanilla into the crumble mixture. I think that my crisp could have been a bit crispier, but I'm an amateur with crisps, so I think that will come with time! Mmmmm!

Soft Oatmeal Cookies

Delicious! Yumo! These were definitely soft and chewy. I used 1 Cup of raisins and this was the perfect amount. I tried a batch rolled into balls and not pressed. They were a bit softer, but even the ones that I pressed with a fork were still soft and chewy, so either works :) Enjoy!!
