I think it's a terrific sandwich filler/salad! And personally, I think people who don't know what on earth they will feed their vegetarian family and friends are missing something basic...good food!

Authentic Mexican Chili Rellenos

Just put this recipe into my recipe box. Can't wait to try them - maybe Christmas Eve! I've always wanted a recipe for these...and have been surprised that Mexican restaurants are now serving them so often with meat inside - yuck. Thanks for rellenos the way I like 'em!

Vegetarian Tortilla Soup

We love this soup. We enjoy all kinds of Mexican, spicy food. I made this on Christmas day as our vegetarian contribution after a day of cross country skiing in Montana - I used fresh chopped onions and peppers, NSA chopped tomatoes, and a combination of low or reduced sodium veggie broth and some homemade broth. I added no extra salt - the blue chips on the bottom and the cheese were plenty. A freshly chopped ripe avocado on top was the sweet, smooth touch we all enjoyed! Yummy! Thanks so much for the recipe! We didn't have margaritas that night, but what a wonderful addition they or some Mexican beers would be! Enjoy!

Tuesday Night Quick Salad

All yummy ingredients. We sometimes use Feta as part of the cheese as Gorgonzola can be a bit too strong for our liking. If you want to add protein, try adding some drained and rinsed garbonzo beans or black beans or slice a boiled egg. Still easy, and still yummy!

The Best Vegetarian Chili in the World

This sounds yummy. I have a recipe that is very similar, and we make it regularly...I'll definitely put this into my recipe box and make it soon! Thanks for adding more vegetarian recipes (vegetarian as in no chicken stock or fish or whatever that came from meat!).

My Friend Salli's Sesame Crackers

These tasty crackers are very easy and fun to make and make a terrific gift for the holidays! I use less salt because of my own preferences and eating habits, but friends did not say they were too salty. I'm going to try another batch and include flax AND sesame seeds. Good plain, with peanut butter, or any cheese spread, including sharp or sweet!

Black Bean Rice Burgers

We really enjoyed these. I doubled, almost tripled the recipe, including 2 cans black and one can garbanzo beans (reduced sodium). I formed the patties into approx. 4 oz portions and froze them on a cookie sheet; then wrapped them individually. They cook easily right out of the freezer and hold their shape - yummy!

Mexican Bean Salad

Very tasty and colorful salad! I also worked at making this a bit healthier, adding no sugar, less oil, and no added salt - I used 50% reduced sodium beans as well! Since I had used up the rest of my red wine vinegar, I substituted about 1/3 cup of tarragon vinegar, and found it added interesting flavor. We added a touch more hot sauce at serving time just for added zing!

Cheese Sauce Over Cauliflower

Delicious sauce, and just what I was looking for when cooking a large head of cauliflower! I added a little dry mustard and used very sharp cheddar for extra zip!
