My veggie lasagna and homemade soups/stews are always a hit when shared with family and friends...In the summer, my crunchy and light potato salad gets rave reviews, even by people who don't like potato salad!

The first time I tried to make homemade piecrust, I ended up throwing it across the room! And, when my kids were young, we made the mistake of serving vegetarian 'bean birds' for Thanksgiving...We still haven't lived that one down!

Old-Fashioned Potato Soup
This soup is terrific! We don't eat meat, and I wanted to use items in my kitchen, so these are the changes: I used "I can't believe it's not butter", sliced 3 carrots (for color and because I really like them), Used 3 Tbls. of "Better than Bouillon", and used almost 4 cups of 1% milk with a cup of buttermilk, some of which I pureed and added, and I lightly steamed some broccoli and added that. I only added pepper, since the broth was very flavorful on its own! Will definitely be making this all through the fall and winter!

Apple Pie by Grandma Ople
This is such a scrumptious pie! It needs no changes whatsoever. The only additions I make are to add a few raspberries and a few crumbles of sharp cheddar cheese mixed in with the sliced apples. I have some 'apple pie spice' which I sprinkle on the sliced apples before putting them into the crust, too. That is a mix of cinnamon, allspice, nutmeg, and ginger. The whole house smells SO good while it bakes! It's wonderful!

Jalapeno Lentil Burgers
We really like these burgers. The Panko breadcrumbs and eggs really help hold them together. I made a double batch and plan to freeze some of the mix for another time and am actually looking forward to partially baking them and finishing on a grill. So often we go to b-b-q events and have really tired of settling with salad and frozen veggie burgers. I'll add more jalapeno next time, and may add some cumin, too. Delicious hot OR cold for sandwiches, too! Thanks!
