Great cheesecake, easy to prepare! When I make cheesecakes, or minature cheesecakes in muffin papers, I usually have problems with cracking or the middle will sink a little. I always mix up an 8 oz. container of sour cream to 2 heaping tablespoons of granulated sugar. Pour or spoon that over the cheesecake, while the cheesecake is warm. It will fill in any cracks, and leave a smooth shiny topping that sets like a gelatin. Works everytime! You can then even put your berry toppings or cinnamon.
