Peach Upside Down Cake I

This is a very moist, tasty and good cake. I read the reviews about the bland cake. I then added 1 tsp. cinnamon and 1 tsp. almond flavoring. I doubled the recipe and put it in a 9 x 13 pan. I used leftover fresh peaches that I had sliced with a little sugar the night before. I poured the peaches and the juice in the bottom of the pan. It all cooked into the cake and made a very pretty and moist looking cake. Very easy and very good!

The Popcorn Cake

I have made a similar cake like this for years. This was a good recipe, but still like my old favorite. Marshmellows, butter(real butter), vanilla, popcorn, M & Ms and cashews. I salt the popcorn and then the added sweet things are just right!

Green Beans for a Special Occasion

These were good, but I thought it needed a little more flavor...I did add a few things. I first sauted a little bacon until the fat was gone with thinly sliced wedges of purple onion, drained the grease. I then added the pine nuts, green beans a little olive oil and a few tablespoons of balsamic vinegar. This was excellent.

Raspberry Trifle

I made this recipe and added layers of shaved chocolate. I didn't use the cocoa as I was out. It was very good! Will definitely do again.

Prosciutto Parmesan and Pine Nut Bruschetta

Wow! This was excellent. I did change it a little....I brushed a very small amount of olive oil on the slices of break and grilled them on my "George Foreman grill", then took a raw clove of garlic and rubbed it on each slice of bread. I also added chopped sundried tomatoes to the mixture. It was delicious.

Black Forest Cheesecakes

These were easy. Very good...however, I worried the pie filling was too sweet with everything else, so I added a few fresh raspberries on top...no pie filling. They looked pretty and tasted great.

Onion Bake

A great recipe to serve at a barbeque. I have made this several times, but have added parmesan cheese to the cheese on top. My family loves parmesan. I will definitely keep this recipe around.

Lemon Curd Tassies

These were easy to make, but time consuming. I made them in mini muffin tins, so they were a perfect accent on a cookie tray. I did not put the slivered almonds on top, but sprinkled powdered sugar, as I do on lemon bars. That was the perfect sweet tough to the tart lemon.

Crispy Pretzel Bars

I used this recipe and combined it with another one. It was really good! I used 1 stick of butter, browned it, half cup of peanut butter, tsp. vanilla, 2 10 oz bags of marshmellows. Melted it all put in the pretzels, rice krispies which I increased to 6 large cups, M & Ms and pressed in a pan. REally good and just right! Next time I will follow the recipe, but I didn't have corn syrup!

Bacon-Wrapped Pineapple Bites

Very good. I messed this one up...but it was good. I misread the recipe...did it from memory. I wrapped the pineapple with bacon, put the toothpicks through them and then soaked in sweet and sour. Baked and sprinkled with garlic powder. They were very good.

Apricot Danish Coffee Cake

This was the easiest and best tasting breakfast cake. I made it for my daughter's confirmation and it was a big hit. It looked like a professional baker it! It was delicious and definitely a keeper. I have passed this recipe around.

Cola Pot Roast II

This was wonderful! My family LOVED it! I took a knife and made deep punctures in the roast and pushed whole cloves of garlic all over it. We love garlic and this method flavored it through out the roast. It also looked really pretty when it was sliced. If you love garlic, this is a good way to add flavor!

Antojitos Minis

This was a very pretty presentation. I changed it according to what I had on hand and what I like. I used 1 cup of frozen corn, 1 can drained black beans, 1 drained can of rotel ( in place of tomatoes), green onion, cheeses, garlic, salsa. It was really good. I will definitely make this again.

Mississippi Six

This recipe is very good for a winter party. I have made it twice. I subtituted ham for the beef. I prefer that. The second time I made it, was better. I mixed all of the ingredients and put them in the microwave to cook for several minutes, stirring between each minute. I then added it into the bread when it was hot. This made baking it easier and didn't take so long. The first time, it took a very long time to get the center to get hot, and the onions to cook.

Melt - In - Your - Mouth Shortbread

These were really good, definitely melt in your mouth. When they were done, I iced them with 1/4 cup browned butter, 1 tblsp. of vanilla, 3 tblsp. of milk, then stir in powdered sugar to make a thick glaze. I sprinkled green and red sugars on them. The browned butter glaze was really complimentary to the cookie!

Chantal's New York Cheesecake

Great cheesecake, easy to prepare! When I make cheesecakes, or minature cheesecakes in muffin papers, I usually have problems with cracking or the middle will sink a little. I always mix up an 8 oz. container of sour cream to 2 heaping tablespoons of granulated sugar. Pour or spoon that over the cheesecake, while the cheesecake is warm. It will fill in any cracks, and leave a smooth shiny topping that sets like a gelatin. Works everytime! You can then even put your berry toppings or cinnamon.

Apple Enchilada Dessert

Very good. I made this for a mexican dinner we were having at work. I was worried about it being a little bland, so I beat two cream cheese with 3/4 cup sugar and tsp of vanilla. I then stirred in the apple pie filling and filled with that. I ended up making two large ones for work and used cherry pie filling for one and did the same thing with the cream cheese. Everyone loved it!
