Turtle Brownies

As written, yes, these are kind of dry and not the ooygooy brownie we all love. Add 1/4 cup veggie oil and it makes a world of difference. I also added a splash of cream to my caramels so that they didn't get so hard upon cooling again. These brownies are the bomb! And my study group devoured them.

Soft Gingersnaps

I wouldn't really call these gingersnaps but they are certainly awesome molasses cookies! My hubby didn't even mind that they weren't real gingery he STILL loves them!

Tomato Chicken Parmesan

HOLY is this good! I admit to adding a healthy dose of garlic powder, onion powder and italian seasoning to the bread crumb/parm mixture as suggested by others and it is heaven on a plate! This is my new chicken parm recipe. SO easy and SOOOOOOOO YUM!

McCormick® Gingersnap Cookies

My hubby loves gingersnap cookies and my daughter and I had SO much fun making these! Unlike a lot of gingersnap cookies these are firm w/o being hard as a rock! Awesome recipe and since the batch we made this past weekend is nearly gone already, we'll probably be making them again soon :)

Old Fashioned Apple Dumplings

This recipe was just too yummy looking, I HAD to make them for Thanksgiving! 2 small changes not because I didn't like the recipe but because I have an affinity for Mace & whiskey in apple dishes :) I put a pinch of mace in each dumpling and replaced 1/2 cup of the water in the sauce with whiskey, just enough to give it a more full bodied flavor. I also added a dash of each spice to the sauce as well :) Will def be making this again!

Slow Cooker Pulled Pork

Oh my YUMMY!!! I used a 5lb Pork Loin (which barely fit in my slow cooker lol) rubbed it with salt, pepper and some garlic powder. Doubled the root beer and added 2 TbSp liquid smoke. Because the meat was so big I did make sure to cook it for 10 hours. I felt like a 5 star chef when my hubby bit into it and rolled his eyes in delight! Have a ton of left overs which I've stuck in baggies and placed in the freezer for quick dinners when we need them. DEF making this one again!

Hot Milk Sponge Cake I

Great low fat dessert! And a very forgiving recipe. I've never made sponge cake before and my 4 year old was helping me "throw" everything in. So I missed the part about beating the sugar into the eggs first...oops. Everything still turned out just great and we all enjoyed our dessert with strawberries :) Thank you for sharing!

Grilled Pork Tenderloin

LOVE!! I usually cook pork on the grill with indirect heat. I just sear it quickly first and then move it to the unlite side of the grill. Turns out juicy and yummy every time!

Mexican Lasagna

awesome! I added a can of black beans to it and split it into 8 servings (because when I did only 5 they were huge!) Fixed our cravings for mexican food and only cost us 251 cal :)

Lemon Garlic Tilapia

AWESOME! Even the 4 year old couldn't get enough :) Def saute the butter/lemon mix before pouring over fish and I added just a light sprinkle of parmesean cheese on the fish before popping it in the oven for 12 min. Will most definitely be making this one again!

Baked Spaghetti Squash with Beef and Veggies

My family loved this recipe, though I must confess I made a few changes. I have been on the hunt for casseroles that are still light and spaghetti squash fits the bill but the ground beef does not. So I substituted ground chicken instead. I also traded out the shredded cheddar for shredded swiss. Which takes the entire recipe down to 281 calories per serving YAY! and it's still yummy!

Valentine's Pie

YUMMY! Though I recomend using a bigger pie crust oh my goodness the yummy goodness was spilling over the sides lol. My hubby doesn't do chocolate so I am always on the lookout for great recipes w/o chocolate This one is a keeper!

Best Toffee Ever - Super Easy

oooooooo SO GOOD!! I LOVE English Toffee but its hard to find a good recipe. I followed the advice of another poster and whisked my mixture until it started to boil. I would also suggest using mini chocolate chips for the topping, they just melt so much faster and makes it easy. I didn't have almonds in the house but I do have a healthy supply of hazelnuts and any time I can combine those with chocolate is heaven in my book! so I ground them up and dusted the top with hazelnuts :)

Ham Cheddar Chowder

YEOWZAH! this is good! I took the advice of a few other posters and added garlic and a few dashes of hot sauce. I also did half cheddar and half mozzarella cheese (because thats what I had in the house lol). I made it and then let it sit on low for 2 hours just stirring it occassionally. soooooooo yummy! and my hubby really likes the spice so thanks to all for that suggestion :)

Chinese Spicy Hot And Sour Soup

TOTALLY in love with this soup! I crave hot and sour soup all the time and this one really hits the spot! I used baby bella mushrooms because that is what I had. Also used silken tofu because I'm not a fan of the firm. Also I browned the pork in a little bit of seasame oil before adding to the soup because I made my soup in the crockpot. I doubled everything, increased the red wine vinegar to 1/4 cup and let it cook on low in the crock pot for 8 hours. My egg also turned out fine. This one is getting added to my recipe box!
