Sausage and Bean Ragout

Awesome. Will definitely make it again. Rich, hearty...great comfort dinner. Served with green beans and pugliese/italian bread. Next time I will add more spinach and more noodles.

Kalua Pig in a Slow Cooker

Fantastic. We do large batches and freeze it for quick weeknight dinners. Can be used as pulled pork with bbq sauce or Hawaiian mixed plate with rice and macaroni or coleslaw.

My Chicken Pho Recipe

Excellent pho. Just as good as the restaurant. Must have the basil, jalapeno, and lime. Only changes I made were extra fish sauce, rice noodles and lemongrass. (I've never had Pho with egg noodles.) I used homemade chicken stock that was a little weak and was out of chicken bouillon so added a little beef Better than Bouillon to add some richness. Looking forward to trying it with good stock next time. This would be great with Bahn Mi sandwiches for a full Vietnamese meal.

Slow-Cooker Chicken Tortilla Soup II

This was the best chicken tortilla soup recipe I've tried. I would use a milder enchilada sauce for my younger two, but my husband, oldest son and I loved it! I was in a hurry so used two cans of chicken breast from CostCo. This could easily be a quick stovetop dinner. I will use this in my weeknight meal repertoire.

Very good copy of the Olive Garden favorite. I definietly would use more kale, or even substitue spinach if you don't want to use kale. I also used bulk italian sausage browned, which was much quicker.

Banh Mi

The whole family loved this recipe. I have only had Bahn Mi sandwiches from one vietnamese restaurant, I thought these were pretty darn close. I used broiled pork loin chops in place of the chicken. After making this once with the radish and once without, we all opted to forego the radish in the next batch. I also doubled the veggies to reuse again. Or I would decrease the liquids, there is a lot of waste. I found this to be a great weeknight dinner by making the veggies the night before and then broiling up the pork and compiling the sandwiches at dinner time.

Easy Baked Tilapia

Cantina Pinto Beans

This recipe was a hit. I was trying to find something tastier than plain pintos but no refried. I think adding beef broth could give extra flavor. I will tweak it some next time, but a very good base to experiment with.

Asian Roll Lettuce Wrap

Loved it! I also just browned the meat to make it quicker. I added a bit of cumin and my husband added curry to the leftovers and it was pretty good! Would definitely make it again; may even try to do it with diced chicken.

Asian Style Country Ribs

Everyone liked it, from 6 and up. The notation of 12 ribs is a little vague. I used approximately 3.5 lbs. of boneless country style pork ribs. I made changes as some have suggested...reduced soy sauce to 1/2 cup, reduced sesame oil to about 3-4 Tbsp. (all I had left!), added 1/4 water, added 1/4 cup honey and increased Sriracha to 2 Tbsp. Also doubled the garlic and ginger. Served with steamed carrots, edamame and rice. I know it's not necessarily an authentic pairing but the kids ate heartily! Will definitely make again.

Panang Curry with Chicken

This was very good, however the curry paste I could find was a bit too spicy for two of my kids. Frankly, it was a bit too much for me, too. If I can find a milder curry paste, we will definitely try this again.

Udon Peanut Butter Noodles

Everyone but the 6 year old liked it. Good peanut flavor; doubled the sauce...probably should have only increased by 1.5. Added 1/2 a zucchini, sliced mushrooms, 16 oz. fresh udon and 1/2 c. orange bell pepper, chopped. Quick and tasty one pot meal.

Root Beer Pork Chops

Didn't love it...but it did make the pork chops moist. Maybe next time I'll use "good" root beer. I used generic. It was kind of a weird flavor pairing for all of the family. Most likely won't try it again.
