Roasted Pears with Caramel Sauce

Yum! I used almonds, and substituted ricotta for sour cream, but I think either works fine. Threw in a handful of dried cranberries just to use them up and it was a nice combination. My sauce was a little runny and separated, so I'll adjust for that next time. Great taste all-in-all!

Spaghetti Pizza Lasagna

Normally, I don't think it's fair to rate a recipe you didn't follow exactly. But this sounded awesome to use up some ground turkey and really spicy chicken Italian sausage, so I cooked those up and omitted pepperoni. I cut back on milk and added an extra egg as per comments. Also added onion and extra spices, 'cuz we like a little bite. Loved it. Very good. My two cents- cover it for at least part of the bake time to keep the cheese from getting hard.

Juicy Roasted Chicken

I don't know why this works, but it just does! I made it as directed the first time because I think that's the only fair way to rate. Loved it! Then made it my own- brine with herbs and garlic overnight, then roast with extra herbs and spices as preferred. Excellent and a family favorite!

Chinese Shrimp and Tofu Soup

I pretty much followed this recipe. I only had cooked shrimp, so I marinated it in chile sauce and hot chili oil and added it at the end. Added scallions and cabbage. Used firm, pressed tofu, but forgot to marinade it- bland. I did stirfry it in place of the shrimp. It was great.

Corned Beef and Cabbage

Hubby is a corned beef snob and loved this! Says it's by far the best recipe I've used. I don't even bother with potatoes- 'cuz when the meat's this good, they just take up space! I have modified this in a large roaster (I use my huge pozole pot) in the oven when we have this for guests. Just as good, but you have to be home to watch it.

Gumbo Style Chicken Creole

I stuck pretty close to the recipe. Used red instead of green pepper, and used a small can of tomato/chili and a can of regular diced tomato (I feed two varsity football players- I made A LOT). Everyone RAVED about this recipe. Really easy and great for using up whatever you have on hand or left over- you can throw anything in this and it will be great.

Stuffed Peppers with Turkey and Vegetables

I didn't have mushrooms or zucchini, so I added carrots. I did have a jar of roasted red peppers- yum. My husband loves roasted garlic, so I threw that in instead of garlic powder. Excellent recipe!

Where did I go wrong? Mine came out like actual soup. Added extra half can of soup because of the 'dry'ratings. It does have potential if you throw in some spice- I used a little Tapatio.
