Jamie's Cranberry Spinach Salad

I brought this salad to a potluck. It was gone in a flash. Pleasant to look at, delicious to eat. Hint: accidentally, my husband left out the sugar when he wisked the dressing together for me. It was wonderful without the sugar. Cranberries made it sweet. This recipe is great for those who have to watch their sugar intake.

Ham and Asparagus Fettuccine

I had made some chicken stock. so I substituted the cooked chicken for the ham. Also added some mushrooms and onions. Used 1% milk and thickened with a little flour. Wonderful!

Apple Enchiladas

Not only is this recipe delicious - it is fun and easy. I used 1/3 cup water and sprinkled chopped nuts on the top. Served it with whipped topping.

Brandon's Squash Surprise

Delicata squash is our favorite squash. This recipe is similiar to the way I prepare it. I usually cook my squah in the microwave after poking holes in it with a fork. Quick and easy.

Zucchini Cobbler

What a wonderful way to use zucchini, especially those that are the size of baseballs!! Enjoyed by all and the look of surprise when they learned that it was zucchini was priceless. Can't wait for next seasons crop.

Grilled Zucchini and Squash

Great recipe! I used yellow squash and zucchini, added sliced onions, and decreased the amount of butter. Made the package early in the day, put it in the refridgerator, and onto the grill for dinner.

French Toast Souffle

Delicious and easy. Guests loved waking up to the aroma while it was baking. I used 7 large eggs and it was perfect. Served with fruit for a wonderful meal.

Brownie Biscotti

Easy and delicious! Smells and tastes like a brownie. It did crumble when sliced and the crumbs were eaten, but I wonder if there is a way to slice it without crumbling. My many other biscotti recepes don't crumble.

Great on fresh salmon but oustanding on Alaskan halibut. Makes enough sauce for at least another meal. Butter, honey, mustard mixture freezes well

Cinnamon Hazelnut Biscotti
