Pineapple Chicken Tenders

I reviewed these earlier this week and had to make some changes because they were dry. I added a teaspoon of canola oil to the mixture and some minced garlic for added flavor. I marinated for 24 hrs and baked them, covered, at 400 for 20 mins. They were juicy and tasted much better than the first time.

Quick and Easy Chicken Noodle Soup

This is great soup! I used 3 boneless, skinless chickne breasts. I also cooled and strained the cooking liqiud from the chicken and replaced 1 can of chicken broth with it. I left out the celery and veg. broth because I didn't have any. I did add 1 large minced garlic clove. I put it on a slow simmer for about an hr. Good recipe!

Light Pimento Cheese

Store bought pimento cheese is NASTY! It is made with imitation cheese, whatever that is. Please just make some homemade pimento cheese. It only has a few ingredients. 8 oz. grated cheddar, enough mayo to moisten, a good squirt of lemon juice,cayenne pepper to taste and a jar of chopped pimento,drained. Mix well and chill. Homemade and delicious!!!!!!

Surprise Banana Cake

This is very good. I was looking for a quick recipe to use up bananas and this was perfect. I baked it in a bundt pan for 40 mins and I left out the nuts. It did Not have the dense quality of banana bread like some reviewers said. It was light and moist. I think the secret is to cream the sugar and margarine (or butter)really well and then add the eggs and mix those in before adding the rest of the ingredients. I was going to make a glaze for it but the family started eating it as soon as I turned it out of the pan. I will definately make this again!

Banana Muffins II

I just tried one of these muffins,warm from the oven, and it was great! I used an extra banana, brown sugar instead of white and margarine instead of butter. I also added a tsp. of cinnamon and a splash of vanilla. They would have probably been sweeter if I had used white sugar but I don't think sweeter is necessarily better. They were done in 25 mins. I will make these again.

Fabulous Fajitas

This was great! I had a couple of pieces of sirloin steak(raw) and I used that instead of chicken. I cut it in strips and marinated it in a big storage bag with liquid zesty Italian dressing for a few hrs. I didn't use mushrooms because my family hates them. I used extra onions and peppers because I had more than 2 cups of meat. The liquid marinade cooked down nicely and when I added the dry dressing mix it just made the flavor POP. Everbody chowed down on these and I will definately make them again. We also had spanish rice and fat free refried beans.

Creamy Macaroni and Cheese

I have been married 27 yrs. In all that time my husband has only refused to eat 2 things that I made for dinner. This is the 2nd one. Ithiught it was ok and my 15 yr old daughter liked it but if my husband doesn't like it its out of the dinner rotation. I had the computer redo the recipe for 5 servings and followed it exactly with the exception of dry mustard instead of jarred. I gave it 2 stars since my child did like it.

Kat's Alfredo Potatoes

This was a good recipe! I was looking for something new to do with potatoes and this was perfect since I had a jar of alfredo sauce. I upped the oven temp to 400 and covered the dish with foil and it still took over a hr.Next time I may cube the potatoes instead even though my slices were very thin. I didn't have any swiss cheese so I used all parm,shredded, and uncovered for the last 10 mins. and added a little more to the top. My daughter liked it which makes it a hit in my house. I will make it again ...but it is a very rich side dish and I wouldn't serve it with a heavy meat item....we had it with 93% lean burgers...It was tasty!

Best Ever Muffins

Although these muffins were good, they made a mess in the oven. I made 12 as per the recipe and they ran out of the pans and all over the bottom of the stove. They were an ugly shape also due to the spillage. I added apple chunks and cinnamon to them. They tasted fine but what a mess. I will try them again and use part of another tin to finish using the batter up.

Stromboli

I made this for supper tonight and it was a big hit. It looks more like a giant calzone to me rather than stromboli but it was good. I used a little more than a lb. of italian sausage and left out the ham and ground beef. I had a larger pizza crust and it still did not need a whole pk of pepperoni. I did not use the green pepper and added italian seasoning and garlic to the meat mixture. Watch it while its cooking. At 20 mins mine was ALMOST too brown, 30 mins would have burned it. We had it with a big mixed green salad!

Jambalaya II

I made this for my daughter's french class for Mardi Gras a couple of wks ago. It was a big hit with her class! I used chicken thighs, 8 of them ,49 cents a lb. that wk so it was very inexpensive to make. I didn't use as many green peppers because they are expensive right now and I used 1/2 the amt of bay leaves. The spices were right on target, not too spicy for the school kids and I served the rice on the side! The rest of the ingredients stayed the same.

Slow-Cooker Pepper Steak

I made this yesterday. I added a can of mushrooms,used 2 b. cubes and 1 cup of water,5-6 TBLS.soy sauce and 2tsp of sugar. I think the sauce could even be tripled. I did add garlic also. It cooked for 6 hrs on low and it was delicious. I don't think it make 6 servings though, more like 3-4 served over rice. I will make it again. I did wait and add the gr. peppers about 2/3 way through.

Best Brownies

Excellent brownie recipe! I doubled it and used a 9x13 pan. I also subbed shortening for the butter. They cooked in the minimum amt. of time and the edges WEREN'T hard!I did not try the frosting recipe and they are fabulous without it. I had all the ingredients on hand too and that's a plus.

Unbelievable Rolls

This is similar to an overnight sweet sourdough recipe.The lid blew off of my bowl during the 1st resting period...but I knew my yeast wasn't old when it did! The dough was a bit sticky and more flour was added.Whoever said this recipe made 16 rolls must make the biggest rolls ever!(or maybe I make the smallest) I had a 9x 13 pan with 24 rolls and an 8x8 pan with 16.They were tasty and we enjoyed them . I like the fact that they can be put together so fast and in 1 bowl. I will make them again...oh and I didn't cook them as long, 10-12 mins.

Spiced Applesauce Bread

I made this today and its almost gone already! I used chunky applesauce and 1/2 cup of baking splenda in place of the sugar. It smelled fab while it was cooking and I can only imagine how great it would smell if I had baked it in the winter and all the windows were closed! It was a big hit and I will definately make it again! I don't use nuts very often in baking so the absence of them in the ingredient list didn't matter!

Easy and Quick Swiss Steak

.too many canned tomatoes....use pounded round steak.....dredge in flour....brown well and set aside, add a small amt of oil to pan,saute onions and mix in enough flour to make a nice roux..cook for a couple of mins.add 2 cans of diced tomatoes at most and thin with water or beef broth...season to taste, return beef to pan and simmer until tender...sauce is killer on baked potatoes!Try it.

To Die For Blueberry Muffins

I made these yesterday!Delicious!!!!!I used 2 4.4oz containers of frech berries and dusted them with flour before adding them in. I also used baking Splenda instead of sugar. I did use brown sugar for the topping. I made regular size muffins and got 12 out of it,baked the minimum amt. of time and they were perfect.

Chicken Enchiladas II

You have got to try this with Campbell's new creamy chicken verde soup! I used 2 cans of it and doubled the sour cream for a moister filling and more sauce to cover it with...mixed x-sharp cheddar with pepper jack for the cheese...If you double the other filling/ sauce ingred. don't double the cheese ..maybe add slightly more. I also used fresh garlic,sweet onion and left out the green chili. Since the chicken breasts I used were large I made 8 enchiladas and could have gotten at least 10 out of it...The famliy ate it all and they loved the filling ! We had spanish rice with it.

Garlic Chicken

This was delicious! I had jarred garlic,I used 2 heaping tsp. for 3 chicken breasts! I used the leftover oil to drizzle on and around the chicken before baking. It was moist and tender. We had it with buttered boiled potatoes and mixed green salad. THERE WERE NO LEFTOVERS!!!!!

Chicken and Biscuit Casserole

This is a good recipe!I left out the celery. I added extra onion and more peas. The basil is a must! It really make the sauce! I floured the biscuits in a small bowl instead of on wax paper...less mess!I didn't cover it the last 10 min. either. I will probably 1/2 the recipe next time, it makes alot.Perfect for a big family!
