My favorite things to cook
I love to make dinner! My main dish meals are always a hit! I also love to grill.
My favorite family cooking traditions
Every Christmas Day we have shrimp cocktail, baked potatoes and steak on the grill. We have all the ham and turkey at my mothers house later.
My cooking triumphs
I make a killer "chicken on a stick". All of my daughters friends LOVE it. I recently made 400 pieces of it for a school event. I also think my pot roast is good and my spaghetti sauce too. I also make a mean cream of broccoli soup and a great bean and bacon soup!
My cooking tragedies
Alas, I am NOT a dessert person! I do not enjoy making desserts and my husband LOVES them, even though he is diabetic. I try to keep sugar free sweets here for him!

Pineapple Chicken Tenders
I reviewed these earlier this week and had to make some changes because they were dry. I added a teaspoon of canola oil to the mixture and some minced garlic for added flavor. I marinated for 24 hrs and baked them, covered, at 400 for 20 mins. They were juicy and tasted much better than the first time.

Quick and Easy Chicken Noodle Soup
This is great soup! I used 3 boneless, skinless chickne breasts. I also cooled and strained the cooking liqiud from the chicken and replaced 1 can of chicken broth with it. I left out the celery and veg. broth because I didn't have any. I did add 1 large minced garlic clove. I put it on a slow simmer for about an hr. Good recipe!

Surprise Banana Cake
This is very good. I was looking for a quick recipe to use up bananas and this was perfect. I baked it in a bundt pan for 40 mins and I left out the nuts. It did Not have the dense quality of banana bread like some reviewers said. It was light and moist. I think the secret is to cream the sugar and margarine (or butter)really well and then add the eggs and mix those in before adding the rest of the ingredients. I was going to make a glaze for it but the family started eating it as soon as I turned it out of the pan. I will definately make this again!
