Make-Ahead Mashed Potatoes

This is a great make ahead or freeze ahead recipe. I have also used French onion dip in place of the sour cream for a great change up. Love anything I can make in advance for holidays!

Jenn's Chicken Parmesano Supreme

This rocked our socks off! Everyone in my picky eater family LOVED this chicken. I didn't top with the Caesar dressing but followed pretty closely other than that omission. I used a homemade batch of marinara I had frozen this fall. It was wonderful. It was a bit of a mess but was well worth the time and effort.

Ultimate Irresistible Granola

Great recipe! I increased the oats (about 9 cups) and left the oil/honey amounts the same. Just the right amount of sweet and not too much oil (by granola standards). Toasted beautifully and became crisp as it cooled. My family is enjoying it as a breakfast cereal, snack, yogurt topping. A Keeper for sure.

Poppy Seed Dressing II

This is a great dressing. I used it over romaine, craisins, cashews, red onion, and cucumber. YUM! I discovered I was out of yellow and white onions and I used a red onion for the dressing. It turned it pale pink! I'll be using it again for my Easter Dinner salad as I thought the color was excellent and springy!

Pumpkin Cheesecake Bars

I'm glad I had company over when I made this dish...it was the only thing that kept me from eating the entire pan! Really yummy! The crust is awesome and nutty. The filling is creamy and flavorful. I doubled the recipe and used a 9 x 13 pan. For next time I will be sure to press my bottom layer of crust into a thinner layer as I think I was too generous on the bottom and it was a little thick. Highly recommend.

Pretzel Salad

Underwhelming. The crust seemed good. The creamy whip part was good. The strawberry gelatin was ... gelatin. I have to say that after all was said and done. I just didn't think it was very good. I won't make this again.

Honey Baked Chicken II

Dijon mustard and nix the curry (for which we do not care). I used split breasts and trimmed much of the skin to eliminate some of the fat. I used a deep pan to eliminate the splatter in my oven. It was great---no mess, easy, tasty.

Baked Potato Soup III

Made this soup for the first time on Christmas Eve along with a hearty chicken chili that always gets rave reviews. Should have tripled this recipe! It was the belle of the ball. Almost had people licking the inside of the crock pot! But then my friends are kind of like that...hopefully you hang with a more civilized crowd.

Maman's Fresh Strawberry Rhubarb Pie

I followed the recipe (for once!) and it was beautiful, tasty, and gone in a flash. Topped with fresh whipped cream, this pie was refreshing and because I could make it ahead and not heat the house by turning on the oven----it's a summertime keeper!

Quick Tuna Salad

This is my standard tuna recipe. If you want to cut back on the calories and fat--substitute plain yogurt for the miracle whip. The relish gives it the zing and the yogurt makes it seem like the regular recipe. A splash of mustard is a great addition also.
