This was pretty good. I used two cups of brown minute rice and a half of the package of soup mix and it turned out perfectly. Putting the rice mixture on top of the chicken keeps the chicken really moist, tender and flavorful.

Chicken Enchiladas II

Delicious! My whole family loved it. I used some leftover shredded chicken that I had and simmered it in chicken broth and fajita seasoning for about 10 minutes or so. I followed the advice below about doubling the sauce, but I found that I had a lot left over. But I would rather have too much than too little. I will definitely be making this again!

Buffalo Style Chicken Pizza

Way too much blue cheese for me. It completely overpowered everything else. That said, I can see how this would have been delicious if I had just used less dressing, so I'm going to try using only about half of what the recipe calls for next time.

Oven Fries

Everybody in my family loved these fries! I used a little more oil than the recipe called for and seasoned salt instead of cayenne pepper, but it turned out great.

Breakfast Casserole II

Everyone loved this recipe, old and young alike. The only change I made is adding about 1/2 cup of cheese to the mixture before I put it in the baking dish because we really love cheese. I put it together the night before and stored it in the fridge. It still came out fine.

Maryland Crab Cakes I

I orgininally made them exactly as stated in the recipe, but they wouldn't hold together at all. I added another piece of bread and another egg and it held together a little better, though some did break up during cooking. Next time I'll add more Old Bay Seasoning since the extra egg and bread made them a little bland, but I will try them again.

Basic Ham and Bean Soup

Everyone loved this soup, even my 11 year old daughter. I did subsitute 4 cups of vegetable broth for half of the water and I used a bit more carrots and celery than stated in the recipe. This recipe is a keeper!

Baked Kielbasa and Potatoes in Sauce

This was really easy to make and tasted really good. But I do agree that the cooking time as stated in the recipe was too long. Next time I'll probably only cook for about an hour and half or so.

The kids loved these! I had a hard time pressing the biscuits out and never did get them out to 4 inches. It was also hard to get a rim around them, but I will probably make them again.
