About this Cook
I am 5'3" of pure curiousity. I love to be creative and find the best way to express myself is through my art. I am a graphic designer by day, gluten-free cook by night. My husband was diagnosed with Celiac Disease in January, 2008. I love to cook, and never really did until I was married. Since Jan. my goal has been to make delicious meals that did not contain any gluten so that my husband would not feel totally deprived from all his favorite meals. It has been quite the learning experience, for me, but I feel that I am getting better at it everyday. I plan to post more gluten-free recipes on this site for those who can relate and need a little help like I did in the beginning.

Autumn Cheesecake
This cheesecake had a wonderful balance to it. The topping to filling to crust ratio was perfect and it was not too rich, but a medley of explosive yummy (c: My husband never asks for seconds on cheesecake but on this particular recipe he could not get enough of. I used pink lady apples for the topping and added a little more cinnamon than what was called for to coat the apple slices. This is a great recipe year round and wonderful served extra cold on a warm summer day.
