Restaurant-Style Potato Skins

I've made these several times now and I love this recipe so much. They taste exactly the same as the kind I've bought in restaurants. I've made them for friends who wouldn't believe I made them myself. Thanks for sharing the recipe.

Mini Cheesecakes I

These mini cheesecakes are real gems. I made some mini cheesecakes in the tassie pan and some in my regular muffin pan for larger "treats" (of course I cooked those for 5 minutes longer). I have three words to describe them...Fab U Lus! Yummy! I can't wait for a special occasion where I can make them and wow all my friends.

Yummy Honey Chicken Kabobs

Insanely Easy Vegetarian Chili

My boyfriend and I have been trying to find some meatless recipes that we both enjoy for a while and this one is a keeper. I didn't have celery so I made it without it. I also used a can of mushrooms instead of fresh....sometimes you have to use what you have on hand. I cut down on the cumin a little too. I also added a can of rinsed chick peas and a can of Maple flavored baked beans. We enjoyed it so much we've added it to our weekly menu.

Cafeteria Carrot Souffle

I am originally from a small community in Newfoundland called Piccadilly so the title of the recipe caught my eye. I made it as a sidedish with my Easter dinner and it was a hit. I sent the recipe to my mother immediately. I'll definately make it again and again.

Strawberry Spinach Salad I

I went to a small dinner party where the hostess served a delicious salad with almonds, strawberries, salad greens and the most amazing dressing. I'm not much of a lover of salads but after sampling this one I was hooked. I spent weeks looking for the recipe and then I found this one. I read all the great reviews and tried some of the suggestions. I didn't like the balsamic vinegar. I followed the recipe as it was but I only used half the olive oil and I used Equal instead of sugar. I also glazed the strawberries and caramalized the almonds. It was amazing. Even my boyfriend, who is a meat and potatoes person, loves it. I went from never eating salad to eating it at least once a week.
