Curried Coconut Chicken
Thanks for submitting this. My 7 year old son helped me make this for dinner tonight (I figure he'd eat it if he made it!) and it was a big hit with my whole family. I made it exactly as written and it was perfect, although it probably simmered for closer to an hour. The sauce was delicious and it was very healthy served with brown rice. I also served fresh cilantro on the side. Perhaps next time I will decrease the oil and use the light version just to make it a little 'lighter'...Will DEFINITELY be making again!
