Chocolate Chip Banana Muffins

LOVE these! I love banana bread, but it can be dense and heavy. These are light and fluffy and DEEElicious! Definitely a keeper. I followed the recipe exactly, but found they were done in about 20 minutes.

Chicken Parmesan Casserole

This was OK. My kids loved it, but it's kind of bland. It's a great quick and easy meal. I agree with others that some seasonings or something should be added. I followed the advice of adding more sauce. Two cups is definitely not enough! I'll probably make it again, but I'll definitely add some basil, oregano or Italian seasoning.

White Zinfandel Chicken

Yummy! We used an extra tablespoon of olive oil in the marinade as someone else suggested. Also, we didn't have white zin, so we tried balsamic vinegar. Wow! Very flavorful!

Slow Cooker Beef Stew IV

This so yummy. My husband and I had to restrain ourselves from digging into before it was done because it smelled so good! 2 out of 3 kids gobbled it up. The one kid who didn't eat it is my kid who usually eats anything and the other 2 are the picky ones - go figure! I followed the recipe exactly. It is a perfect cold fall or winter day supper - definitely comfort food!

Tuna Noodle Casserole I

Good quick, no-frills, last-minute dinner idea. I'm glad to have a tuna casserole that doesn't use condensed soup. I used 2 5-oz cans of tuna and some frozen mixed veggies. The kids loved it!

Addictive Sweet Potato Burritos

These were interesting. Very different. Different, but good. My 8-year old made a funny face with her first bite and I assumed she didn't like it. She said, "It's weird. It tastes good, but weird." That about sums it up. They are very good, but very different. Definitely a keeper. Next time I will add less water. I had to use a strainer to drain off some of the liquid in the bean mixture - too soupy. I also reduced the amount of the chili powder and cumin because I was afraid it would be too much for my kids. Next time, I'll use the full amount. Oh - I also completely forgot to put the cheese in and they were still good!

Chocolate Muffins

Great easy muffins. I made them last minute and had to substitute low fat plain yogurt for the sour cream and they turned out great. My only complaint is that they seem s little on the oily side. 1/2 cup of oil seems too much. I love that they are not too sweet.

These are amazing! Soooo delicious! I followed the recipes exactly and made a double batch. I'm so glad I did because they disappeared. They're good without the glaze - not too sweet, but they're wonderful with the glaze as well.

Chocolate Chip Apple Cake

Oh my, this is yummy! The only thing I did differently is substitute allspice for the nutmeg. It could probably use a little less chocolate chips, and I've never said anything like that before! The more chocolate, the better! However, I think the chocolate chips overpower the apple flavor a little. It was delish though!

Easy Red Beans and Rice

I think this is yummy! I agree that it is not a "traditional" red beans and rice recipe. However, it is very good! I omit the meat and add some shredded sharp cheddar on top - YUM!

Turkey Tetrazzini II

I made this gluten free since my daughter was recently diagnosed with celiac disease. I followed a few hints from a reviewer to make it a little more interesting. I sauteed some celery, onion and garlic, then set aside while I got the rest ready. I used brown rice pasta, and made the sauce with 1/2 cup gluten free all purpose flour in place of regular flour. Once the sauce was done, I added about a cup of frozen peas and the sauteed veggies. It was fantastic! Everyone loved it, including a few picky people. DEFINITELY a keeper!

Oat-rageous Cookies

These are super yummy! However, I think that there's so much 'stuff' in them, that there doesn't seem to be enough dough. Therefore, they always turn out very thin and crispy. Maybe it's just me. In any case, they're delicious!!!
