Easy Roasted Pork

I used 2 small apples, grated and some cinnamon in place of the apple sauce. My roast was closer to 4#. I used a Dutch oven w/aluminum foil to seal the lid tight. Got lots of juice. It took 3-4 hrs. to bake to tender. Very nice!

Baba Ghanoush with Yogurt

I omitted the teriyaki sauce. We made it without the yogurt at first but after tasting it, decided to add the yogurt. Quite delish! I used 4 cloves of mashed garlic because we like garlic.

Carrot Cake III

Delicious! One of the best ever. I *did* add a tablespoon or so of milk to the frosting. There was a *lot* of frosting for a 9 x 13 pan. But, can there ever be too much cream cheese frosting???

Shepherd's Pie VI

Very good! I added about 1/2 c. of milk to a saucepan with the butter and onion for the mashed potatoes. I also added 3 cloves of minced garlic to the milk mixture and heated it for a few minutes before making the mashed potatoes. I'll make this again!

Authentic Bangladeshi Beef Curry

I used 2 Serrano chilies instead of the others and I omitted the cayenne. It was spicy enough that way. I used about 1/2 c. more water as I made it in a Dutch oven and the first cup of water evaporated quickly.

Easy Garlic Broiled Chicken

I used 1/4 c. butter, and that was plenty. Used skinless thighs and baked in the oven at 350 until done. Delicious!

Easy, Eggless Strawberry Ice Cream

I used whole milk and half and half (instead of cream). No food coloring. Used frozen strawberries that I thawed. Blended all with a wand blender before I put it in the ice cream maker. Delicious! Easy. Fit in my std. ice cream maker just fine (no over-filling.) Took about 40 min. to process in machine.

Bagel Bread

This is a delicious, easy bread. Makes 1 *big* loaf! I made it my bread machine w/bread machine yeast but made a round loaf and baked it on a cookie sheet. (The photo of a big round loaf on cooling racks is mine.) Brought it to a pot luck and my foodie friends enjoyed it. A gluten intolerant friend said it was worth taking a gluten enzyme tablet just to taste it. I'll make it again, exactly as written.

Pecan Pie Bars I

I cut this recipe in half and used an 8" sq. cake pan. The filling took longer to set (cease to jiggle) than the recipe indicated but the results were wonderful!

Brown Sugar Meatloaf

I made this with 80/20 ground beef, 1 1/2 dried hamburger buns instead of crackers, 1/2 c. milk, garlic salt instead of salt and a shake of Worcestershire. The sugar/ketchup should definitely be on top. The meatloaf was very juice and flavorful. I'll make it again esp. with 93% lean.

Belgian Waffles

A very flavorful waffle. I halved the recipe and got 5 round Belgian waffles. I melted the butter in the milk then added the yeast after the milk had cooled a bit. Also, I did not separate the yolks & whites but used the whisk attachment to mix the batter. Thus I reduced the dishes used in prep.
