Soft Christmas Cookies

Very good cookies. I had difficulty figuring out when they were "done." If I made them thin, they got brittle, thicker and I ended up under cooking them. However, both tasted fine. I thought they needed icing, though, as they were not as sweet as I prefer a sugar cookie to be. I think if I used real butter instead of margarine, they would have been awesome, even without icing. I'll be using this recipe again - it was really easy!

Simple Chicken Parmesan

My sauce didn't taste good, hence the 3 star rating. I used Hunts tomatoes, so that may have been the "problem" with the taste (author says tomato quality varies by brand). The chicken was very tender (I used cutlets so I didn't have to pound them; they cooked quickly). If the chicken were separate from the rest of the recipe, I would've given 4 stars. Next time I'll use my favorite jar sauce.

Savory Corn Muffins

"Different" is my first impression of the taste from this recipe. I didn't have creamed corn so I pureed a can of regular corn in its liquid. Instead of muffins, I cooked in a loaf pan. I doubled the sugar, but there wasn't even a hint of sweetness to the bread. It was very "cornmeal-y" tasting. Not bad, but just not a lot of flavor and a lot of texture from the cornmeal. If I made it again I would add a lot more sugar to at least get a more predominant flavor going, and not just texture. With a whole lot of butter, though, it was still good to eat.

Sugar Cookie Slices

I'm not a huge "rolled out" sugar cookie girl (don't like the work involved), but I love sugar cookies. Even using half sugar/half Splenda, these were FABULOUS! They taste very close to store bought sugar cookie dough. This is my new "standard" for Christmas sugar cookies. Simple, extremely easy and very delicious!

Gourmet Sweet Potato Classic

Followed exactly and it was awesome! My "blunder" was not baking my sweet potatoes long enough, so they weren't totally soft when I went to mash them. I did my best, and after the dish was baked, there were some nice, soft chunks that I thought added a nice texture to the dish.

Mrs. Sigg's Fresh Pumpkin Pie

Not sure what a "sugar pumpkin" is, so we used our fall pumpkin. I didn't have pumpkin pie spice, but used a little mix of cinnamon, allspice and nutmeg. This was delicious and super easy!

Low-Fat Pumpkin Bread

VERY good, especially for being a lower fat version. I sub'd Splenda for the sugar, but will try half splenda next time, as I think it leaves an aftertaste. We had lots of pumpkin puree left from our fall pumpkins, so I used fresh in case of canned. I also used jarred baby applesauce since it was all I had (I'm not ashamed! :), 1 whole egg & the rest whites, doubled the cinnamon (I like a lot), and used nutmeg. Also used semi-sweet choc chips in place of nuts/raisins. It was delicious, and I'll be making it again!

Baked Ziti I

I LOVE baked ziti! This was a nice, easy version for me to adapt to my family's preferences, and was also inexpensive to make. I used rotini noodles (easier for my little ones to get on a fork), omitted meat & provolone (for cost), and mixed noodles & sauce together prior to baking, as others suggested. I also covered the pan with foil up to the last 10 minutes, and it wasn't dry. I'll be making this often. I was leery since there were no added spices, but it was still very flavorful. I'll try it with provolone next time.

BREAKSTONE'S Creamy Layered Enchilada Bake

Very tasty dinner! I do recommend mixing the sour cream in with the meat mixture (as one person suggested). Although the picture is lovely, sour cream doesn't spread well and ends up being clumpy. When it cooks it gets a weird texture, too. Next time I will mix it in the meat prior to cooking. I followed Jennelle D's spice options, and used whole wheat tortillas. I lined the pan with foil and used a little oil spray - it didn't stick, but the tortillas on the bottom were a little rubbery the first night. Leftovers were awesome! This recipe is a keeper!

Mexican Chocolate Chili

I love this recipe! I've made it a couple times. I don't change things because there's anything wrong with the original; it's great exactly as listed. A couple things I've done based on my supplies/people's preferences that have worked are: omitted corn once and tasted fine; usually add more chili powder (at least double the amount) b/c I like chili flavor, and I halve cumin b/c I think it's a strong flavor. Add closer to 1/2 cup chocolate chips; it is still subtle, but I just LOVE chocolate in anything. This is a great chili when you want a change of pace from regular chili. I made it today for a baby shower (double batch) and it was almost completely gone!

Mocha Cake I

I "accidentally" purchased a dark chocolate cake mix; not a huge fan of dark chocolate so I looked for something to "help" it out. This was a delicious recipe! I didn't have coffee liqueur, and didn't read the suggestion about using strong regular coffee until later (I'll try that next time). I substituted 3/4 cup water for the coffee. I forgot to mix in the chocolate chips and had already put the cake in the oven, so I sprinkled them on top. They sank about midway for a semi-sweet creamy center - loved it! The cake was super moist.

Strawberry Spice Loaf

I can't believe I'm giving such a low rating, but this was really bad. The only thing I did in addition to following the recipe exactly as written was add 1 Tbs vanilla and mashed the strawberries to help disperse (both based on review suggestions). After cooking for over 2 hours! the bread still was so moist it didn't taste done. YIf I made it again, I'd use less strawberries, but I'm not sure that would do it. The flavor was subtle and different from banana bread (what the other reviews were comparing it to), but it wasn't great. I could find a better use for my frozen strawberries.

Tuna Noodle Casserole from Scratch

I was searching for a recipe that didn't remind my DH of tuna helper, which he abhors. I followed the recipe, changing just a couple things from other review suggestions. Omitted peas & mushrooms due to DH & kids taste preferences, although I think mushrooms would have added a really nice flavor. Used an oil spray to saute veggies and 1 Tbs less butter for sauce to help fat content. Added some chicken bullion powder to sauce along with a 1/4 cup cheese to melt in. It was a little bland - def needed more salt - but I'm not experienced enough to know what it was missing. I didn't have some of the other suggested spices, although they might have helped. It was also a little dry. It's the first tuna casserole I made, but DH & kids requested to not have it again. I didn't think it was that bad.

Tomato-Curry Lentil Stew

For lentil lovers, a VERY delicious stew! There was a lot of flavor, something often lacking in lentil dishes. I tripled the recipe to feed my family. Used diced tomatoes in puree, added a diced potato & much more curry (we like spice!). I didn't see the part about adding the spices until the last 15 minutes until after I had already added everything to the lentils. It's still delicious!

Imitation Meatloaf

I'm NOT a picky eater, so I was surprised at my thoughts on this recipe. It's hard to rate food, since taste buds vary so greatly person to person. I followed a lot of the suggestions (with add-ins), but it was still so, so bland. Also, it was more like a casserole consistency. I can't imagine, even w/ adding more bread crumbs, that it would ever be sliceable, like meatloaf. My kids, however, actually ate it, so the least that can be said is that it wasn't offensive. If your family likes casseroles, with a lot of "doctoring" spice-wise, this would be a good recipe to try.

Balsamic Glazed Carrots

Took advice to steam prior to saute step. Used regular carrots cut up in sticks in place of baby carrots. It was a nice alternative to regular steamed carrots.

Easy Sausage-Pasta Soup

Found this recipe searching for non-spaghetti way to use sweet italian sausage. Only had some ingredients, so I sub'd crushed tomatoes & tomato paste for the stewed tomatoes, added extra water to compensate, didn't have salami, used cheese filled mini-ravioli for pasta. Didn't add any extra spices to compensate and it was superb! The sausage flavored everything beautifully! Will try again with the recipe ingredients.

Curried Chicken Rice Soup

Wow! What a keeper! I made the HUGE mistake of misreading "cooked rice" and I used uncooked rice. I had to make a quick decision after I poured it in and simply added a couple cups of water and simmered it approx 20 min until the rice was cooked. Other than adding extra curry, I followed the recipe. It's delicious! I can't wait to make it again, taking some of the suggestions (like using it without the rice as a sauce and pouring it over rice...will that be a huge difference? We'll see :)
